They don't. Magic is all about making you watch what they want you to watch, not what you should be watching. You cannot turn a hand 360 degrees, but you can sure make it look like you did.

The joints will enable 360 degree move, notwithstanding the tissues favor to be anchored to at least something. in case you've been waiting to curve your arm round and round and round, you'll not manage to have any tissues anchored on your bones. hence, you'll not have muscle to flow your arm. that is a tradeoff between flexibility (joints) and power (muscle groups).

He turns it about halfway, distracts you, turns his arm around so it looks like he never moved it, and then pretends to turn his arm the rest of the way while he fakes aches and pains.
