I am going on a diet and want to keep it interesting. Any good recipes?

Don't want anything involving mayo, too fattening.

only veggies and lemon juice no seeds, croutons, or dressing use green leaf lettuce it is better for you than ice burg

This is a simple but yummy salad recipe and I eat it nearly every day for years and dont tire of it...
2 or more lettuce varieties
Arugula
Diced Tomatoes
Sun dried tomatoes cut up small
White cheese (sort of like a ricotta but firm) in cubes
Sliced cucumbers (I use the thin ones)
You may vary with any other vegetable you have at the moment, grated carrots, broccoli, cauliflower, etc.
Sprinkle with toasted black and white sesame seeds and dressing is a good quality olive oil, balsamic vinegar, red vinegar, salt, soy sauce and toss well...sometimes I add 1-2 small slices of home made crunchy garlic bread on the side.

Cucumber and Celery Salad


Recipe courtesy Rachael Ray
Ingredients
3 tablespoons pickle relish
2 tablespoons cider or red wine vinegar
3 tablespoons extra-virgin olive oil, eyeball it
1 seedless cucumber, quartered lengthwise and sliced 1/2 inch thick (you can use a regular cuke, but
seed it and if the skin is waxy, peel it)
5 to 6 ribs celery from the heart, sliced 1/2-inch thick
1/4 cup chopped hot or roasted red peppers or 1/2 small fresh bell pepper, whichever you have on
hand
1 small jar marinated mushrooms or artichoke hearts or 1 cup pickled vegetable salad, "giardiniera",
chopped
Salt and pepper

Instructions
Place relish in the bottom of a bowl. Whisk in vinegar then extra-virgin
olive oil. Add cucumber, celery, peppers and marinated vegetable of choice to the bowl. Toss salad

Just a simple salad with grilled Chicken is delicious.
So,:
*Salad, as much as you want
*about 4 ounces of Grilled Chicken (can grill with seasoning of choice to spice it up)
*2-4 Tablespoons light Salad Dressing of your choice (I highly recommend Kens Light Vinaigrettes, they're delicious and flavorful)
*cherry tomatoes
*diced red onion
*1 ounce cheese of your choice (i.e goat cheese)
*Olives (green or black, whatever you like)
*Sometimes, Salsa can actually go pretty well on salads, try it if you're willing
*A chopped hard boiled egg
*A LITTLE Avocado
*A LITTLE crumbled bacon
These are only ideas, not necessarily for one salad... I know it's not too interesting, I'm sorry about that, but hopefully something got you thinking! Good luck!!!

I have a great recipe for you, called "Sassy Chicken Salad." :) I found it on a card in the packaging of the canned chunk chicken breast sold at Costco.

I'm not on a diet, but I love this recipe because it's super easy, tastes delicious & refreshing, and is very healthy. It uses only one HALF a cup of mayo for the entire recipe, so the amount of mayo you get in one serving is extremely small. :) Plus, it's light/reduced-fat mayo.

SASSY CHICKEN SALAD

1 can (10 oz.) diced tomatoes & green chiles (drained)
1/2 cup light/reduced fat mayonnaise
1 tablespoon honey
1 can (12.5 oz.) chunk chicken breast (I use Kirkland, the Costco in-house brand)
1 cup celery, thinly sliced
1 cup grapes, halved (any grape type is fine)
1/3 cup toasted pecans, chopped

In medium bowl, combine tomatos & chiles, mayo and honey. Then stir in chix, celery, grapes & pecans. Cover and chill. Serves approx. 6.

Curry Chicken salad

1 cooked chicken breast, shredded
1/2 granny smith apple, chopped
2 tbs raisins
1 tbs pecans, chopped (optional)
1/tbs curry powder
1/4 cup fat-free plain yogurt
1/4 cup fat-free mayo

Just mix it up and serve. You can also use all yogurt, if you don't want to use any type of mayo. This is really good on a bed of mixed greens.

Seafood salad. It contains romaine lettuce, cucumbers, crabmeat, croutons, shrimp, and cherry tomatoes.

well i have this one i made up.. but it helped me so ya know just try it if you get the chance.

1. fresh ledes
2. grilled chicken
3. chopped up tamatoes
4. and top it off with a little bit of light ranch dressing.
just a little cause ranch has alot of calories in it otay!!!
