I will agree with the raspberry vinaigrette, but when I would pick my leaf lettuce to late, what I used to do was dissolve sugar into warm water, pour over ice and then place your lettuce leaves with freshly cut bottoms into the sweet water for about 1-2 hours before. Mix with a honey mustard dressing (Yes, it is as easy as equal parts of honey and mustard!), or you can also add it to arugula, that is already bitter/peppery, and it will mix well.
If it is not a leaf lettuce, but a head lettuce, try grilling it. That will bring out the sweetness. (Remember, leave the core in while grilling, it will keep the individual leaves from sticking on the grill.
You can also make the bitter lettuce into a fruit garden salad. Try getting a can of mandarin oranges, or grill-up some halved peaches (not pits, please) Then you can play the sweet and sour flavors against each other.
Even better yet, if you decide to grill up a steak sandwich and you are adding a horseradish mayonaise, those bitter greens will taste so good with the sweetness of the steak and the heat from the horseradish!

In a jar add 1/3 virgin oilve oil and 2/3 balsamic vinegar, add 3 tablespoons of strawberry jam and a touch of salt and pepper. Place cap on jar and shake vigorously and refridgerate before drizzling over lettuce!

Put some sugar or honey in the viaigrette to dress it. Maybe a honey dijon dressing or put some sultanas in the salad.
