I buy the large size cheese when it goes in sale. Within a week, it will start to grow mold. Yes, use a zip baggie, but better yet, cut the cheese into portion size chunks and use a sandwich baggie to wrap the unused portions. Place these in a Freezer Baggie. Try to get out as much air as possible. Freeze. Cheese will keep for about three months. Take one out and leave on counter to unthaw for about 15 minutes before you use it. Hope this ends the moldy cheese.

Whenever I buy bulk cheese, I shread 1/2 - 2/3 and place in zip lock bags and freeze. The remainder I place in another zip lock and keep in fridge. If a small amout of mold get on that one (which usually does not happen, because I use it quickly), simply cut off the mold and use the rest of the cheese. It will not hurt you.

wrap it in foil. The mold doesn't hurt the cheese just cut it off, after all cheese is made because of mold.

i always wrap the cut/torn package back around the cheese, then stick it in a sandwich baggie or wrap it with foil.

My son puts his in a vaccum seal bag after he takes out the amount he wants to use.
Sometimes he grates it first and others he puts it in whole.
