in the UFC it would be a toss up between hughes and franklin... as they are probably the only two fighters in the top5 of their weight classes...but even hughes has been beated by Bj Penn and Franklin has been beaten by Lyoto Machida...
Chuck Lidell has been beaten by Quinton Jackson...
In the world of MMA the best fighters are BJ Penn, Fedor Emilianenko, Mirko Crocop, The brothers Nogueira, Takanori Gomi, Yoshida, Wanderlei Silva, Dan Henderson...
By the way, to those who say royce gracie has an awesome fighting record, look how puny that is compared to antonio rogerio nogueira (600++ wins with zero losses) and Rickson Gracie (400++ wins with zero losses)....

Look at the history, Royce Gracie. No one comes close to matching his fighting record and you must think about the opponents he fought, plus, in the beginning, a few of the strikes they used are no longer legal. Gloves are in use as well now. The UFC was definitely more vicious in the earlier years.

Matt Hughes in the UFC, but Wanderlei Silva (Pride) is currently the best MMA fighter.

Gracie's opponents in the early UFC's weren't nearly as balanced as they are today. Art Jimmerson wore one boxing glove when Gracie fought him and he tapped out as soon as Gracie mounted him. Matt Hughes dominated Gracie at UFC 60.

currently ufc has 4 champions in different weight classes:
welterweight: matt hughes
middleweight: rich franklin
light heavyweight: chuck liddell
heavyweight: tim sylvia (he is defending his title this weekend against andrei arlovski)
all the champs excluding sylvia have held the title for a few fights now and have all been dominant in doing so. my personal favorite is chuck liddell though

I'm not a fan of his but Matt Hughes pound for pound is. BUT I think St. Pierre learned from his first lost to him and has a good chance to upset him in their title fight whenever it happens.
