Stay with the bare-bones basic:
Strawberry's (red)
Vanilla ice cream (white)
Blueberry's (you know...)

The cheescake idea sounds yummy!
But if you want something quicker and easier (maybe not quite as tasty as cheesecake though!), here's something my best friend and I invented.

1. Buy or make a graham cracker crust.
2. Combine 2 cups of Cool Whip (not a generic!) and 1 cup of strawberry jam (homemade is best!). Taste and adjust to your flavor expectation.
3. Fill crust with mixture and top with fresh blueberries.
4. Cover and refrigerate overnight for the Cool Whip to set.
5. Enjoy!

I've made that recipe for the last two years and people love it! However, if you'd like to try something else that's even easier, make cupcakes using a cake mix and cupcake pan, cool, then frost each with Cool Whip and put a combination of blueberries and sliced strawberries on each. You can have a wide variety of designs and all of them will look patriotic. Best of luck, whichever you choose!

I have seen berries....

like blueberries for the blue, raspberries or cherries or strawberries for the read and whipped cream for the white and make a flag.

Parfait cups with alternating layers of raspberries, Cool Whip and blueberries. Pretty healthy and easy to prepare!

white cake mix from a box add red & blue food coloring to some of the batter
white icing add red & blue food coloring to some of the icing

I think they make fourth of July Rice Krispies... they have red, white and blue krispies in them, and you can make rice krispie treats. That would be easier than cheesecake.
