You can't, really.
A vet can make an educated guess based on their general condition and the condition of their teeth, but it's just a guess and if the cat's much more than a couple years old it's pretty tough for even a vet to tell with any kind of accuracy.
"Young", "Mature" or "Elderly" is probably about as acurate as even a vet can really be with an adult.

You can tell the age roughly by a cat's teeth.But still that's not easy,even for a veterinarian(trust me,I am a vet student).It's easy for kittens,because they change teeth too,like humans.It's also easy to tell if the cat is very old,because then the teeth will be in poor condition.Still,cat's that don't take in the appropriate amount of vitamins and minerals,or don't eat dry food could have teeth in poor condition also.
Whether you just found a cat on the street and decided to keep it or you just got a cat,it's really important to go to your vet,because he or she is the only one who can examine your cat and treat whatever problems it may have.The vet can also give you use-full information about the best way to take care of your cat,the best food you can give your cat and the vaccination program your cat should follow.
Have fun with your new pet (I assume) ,cat's are wonder full animals.But on the other hand,which animals aren't?

It is hard for a regular person (not a veterinarian) to tell. The vet usually looks at the teeth to tell age. Size is not really a good way to tell, though sometimes you can guess at a kitten's age that way. The best thing is to consult the vet. You should take a new cat to the vet and get it's shots anyway, and make sure it is healthy.
