OK. You will need:
1 cup bread crumbs (cracker crumbs work too)
1/2 c shredded coconut (found in the baking isle)
1 egg
1/2 teaspoon salt
1/2 teaspoon pepper

Alright. Now add all the dry ingredients together and mix thoroughly. Take your fish and filet it. Dredge each piece of fish in flour, then in egg. Now dip into the cracker/coconut mixture. Bake at 325* for 15 minutes, or until golden brown. Serve with a nice side of fried onions! Enjoy.

spread shredded unsweetened coconut on a dry sheet pan and toast in the oven at 400 degrees until lightly brown, remove, and let cool

dust halibut with seasoned flour

dip fish in egg wash (or just beaten egg whites is even healthier)

dip fish in toasted coconut

place on an oiled sheet pan bake at 400 degrees. depending on how thick the fish is, it should take about 6-10 minutes per inch.
