First, let me explain some of the definitions that I use for a few of the terms in your question.
Pagan---one who believes in more than one deity. May or may not practice magic.
Witch---one who practices magic. May or may not be religious.
Shaman---one of the many types of pagan, characterized by the use of "journeying" (a type of meditation), animal totems, and is animistic.
I am a "pagan" (there is no reason to use the adjective "true") simply because I am polytheistic (I believe in more than one deity). I can be considered a witch because I occasionally practice magic. The only "true duty" that I can think of for a witch is to practice magic. I am not a Shaman because I do not practice Shamanism. Shamen usually serve their community. Part of their "duties" could include spiritual counceling and healing in a method consistant with Shamanism.
My deities have led me to the path that I follow. On my particular path, my duties include honoring my deities, developing relationships with my local land/water spirits, and honoring my ancestors. Honor and hospitality are important characterics for me to develop and maintain. Practicing magic is an extremely small part of my religious path--in fact, many times I do not choose to use it.
I hope all of this makes sense.

The golden rule for anyone looking into the Wicca way of life is to remember that what ever you do, be it mental, physical, emotional, or spiritual will come back to you three fold. That is why the number one rule in Wicca is to "Harm None". This means people, plants, animals, etc.. There is a website that offers many great books on the topic. It is www.onespirit.com Check it out and read up on the subject to make sure it is for you.
