They can, but you may not get optimum flavor results.

You do it before you go to bed - Preheat the oven to 200F. Lay the Herbs, singly, on a paper towel lined baking/cookie sheet.

Once the oven has reached 200F, shut it off and put the herbs in - close door and leave overnight. In the morning they will be sufficiently dried out and ready to be put into jars, etc.

Harvesting and Drying Herbs

An ordinary gas, electric or microwave oven can be used for quicker drying of herbs. Care must be taken, for herbs can't be dessicated too quickly at too high a temperature or much of the flavor, oils, and color of the herbs would be lost. When drying with a conventional oven: place the leaves or stems on a cookie sheet or shallow pan and warm at no more than 180 F for 3 to 4 hours with the oven door open. When using a microwave oven: place the clean stems or leaves on a paper plate or towel and set the control on high for 1 to 3 minutes; turn the stems over or mix the leaves every 30 seconds.

Yes, but your oven has to be really, really low and it'll take a while. Different herbs will take different temps and times depending on their natural water content. Something like thyme should be very quick with a cooking temp of 200F??? (don't know temp for sure cause I never use dried herbs) whereas something like bay leaves or rosemary which have a lot of water in them would definitely take a long time. You'll just have to experiment a little. But, yes, you can dry fresh herbs in your oven.

YES...

Lay out your herbs on a baking sheet with parchment paper or on silpat. Being sure they are a single layer and well spaced.

Crank your oven out to maximum just before bed. Once it hits max turn it off. Open the door fire your herbs in close the door and go to bed.

YES! on 150 or 200. Different herbs vary, so check on them to see if they are dried to your liking.
