I would suggest either grilling them or, if they are very thick, searing them until they are caramelized and then baking them until they are fully cooked. YUM!

put it ion a skillet with NO oil. Season it and then put water in around it over the top of the pork chop. Let it cook over low heat until the water evaporates, then turn it over and do it again to the other side. As the water evapoates it will keep the pork chop tender and it will brown both sides when the water cooks down to nothing.

Bread them, heat the oven until 350, put a tad bit of olive oil in the dish and lay them in the pan. Cook for about 35 minutes or until done and flip midway to add crispness. Or marinate in BBQ sauce and grill!

STUFFED PORK CHOPS
8 thin boneless end loin pork chops
1/2 cup chopped onion
2 teaspoons dried parsley flakes
2 tablespoons finely chopped celery
2 tablespoons butter or margarine
salt
pepper
1/2 teaspoon poultry seasoning
2 cups soft bread crumbs
2 tablespoons all purpose flour
2 tablespoons shortening
1/3 cup water or broth
Pound boneless pork chops slightly to tenderize and thin out. Make stuffing. In a saucepan, sauté onion, parsley and celery in butter; add 1/2 teaspoon salt, a dash of pepper and the poultry seasoning then mix with bread crumbs. Add a little water to stuffing to moisten. Put a small mound of stuffing on each chop. Roll and tie with twine. Roll pork rolls in flour; brown in shortening in a heavy skillet over medium heat. Add broth or water; cover and simmer for about 1 hour.

Grilled Pork Chops With Summer Squash
4 to 6 pork chops, 1-inch thick
salt
1 can (8 ounces) tomato sauce
1/2 cup water
1/2 cup finely chopped onion
1/4 cup ketchup
1/4 teaspoon hot pepper sauce, or to taste
1 tablespoon sugar
1 tablespoon vinegar
1 tablespoon Worcestershire sauce
1/4 teaspoon salt
4 to 6 medium summer squash, sliced lengthwise
olive oil
Sprinkle pork chops with a little salt. Grill pork chops over medium coals for 35 minutes, turning once. Meanwhile, make barbecue sauce. In small saucepan, combine tomato sauce, water, onion, ketchup, hot sauce, sugar, vinegar, Worcestershire sauce, and salt. Bring sauce to a boil; reduce heat and simmer, uncovered, for 15 minutes. Brush pork chops with sauce; grill 5 minutes. Turn, brush the other side, and gill 5 minutes longer. During the last 10 minutes, brush summer squash slices with a little olive oil and add to the grill or put in grilling basket and grill, or keep chops warm while grilling summer squash, turning, until tender. Serve chops with summer squash and pass remaining sauce.

look on allrecipies.com and look under the pork section and find all kinds of good recipies. one inparticular has a regular and a lowfat version that calls for cream of mushroom soup and itallion bread crumbs. it is delicious.

make sure you cook them slowly so it cooks all the way through.
I like mine with a breading served with apple sause.
If they are really thick, you can cut a slit in them and put some stuffing in...also very yummy
