Blueberry Cobbler
1/2 cup plus 1 tablespoon sugar, divided
2 tablespoons cornstarch
4 cups fresh or frozen blueberries
1 teaspoon lemon juice
1 cup flour
1-1/2 teaspoon baking powder
3 tablespoons melted and cooled butter or vegetable oil
1/2 cup milk
PREPARATION:
Blend 1/2 C. sugar and cornstarch in medium saucepan. Stir in blueberries and lemon juice. Cook, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Pour into ungreased baking dish.
Keep warm.
Preheat oven to 400 degrees F. Measure flour, 1 T. sugar and baking powder into a mixing bowl. Add butter and milk, blend together until dough forms. Drop dough by six spoonfuls onto hot fruit. Bake 25 to 30 minutes or until biscuit topping is golden brown.
Serve warm with some Vanilla Ice Cream.

SUPERFAST BLUEBERRY COBBLER
The buttery crust for this cobbler begins as a batter on the bottom and bakes through to the top. Best with glass bakeware. For easier clean-up, grease pan before filling.
1/2 c. (1 stick) butter
1 c. flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/4 c. sugar
3/4 c. milk
2 c. fresh blueberries (or 12 oz., frozen)
1/2 c. sugar
1/2 c. water
Preheat oven to 350 degrees. Melt butter in a shallow 1 1/2 quart baking dish. In mixing bowl, combine flour, baking powder, salt, sugar and milk; pour evenly over butter. Combine berries, sugar and water; spoon evenly over flour mixture. Do not stir. Bake 40 to 45 minutes. Makes 4 to 6 servings.
Apple Cobbler

2 cans apple pie filling
1 teaspoon lemon juice
1 box yellow cake mix
1 cup chopped nuts (optional)
1 cube margarine
Melt margarine and pour into cake mix. The mixture will be crumbly. Set aside. In a pyrex dish, add pie filling and lemon juice. Mix chopped nuts with the cake mix and margarine mixture and sprinkle over pie filling mixture. Bake at 375 for about 35 minutes or until the topping is golden brown.
Yumm... Now i'm hungry for cobbler/pie.

Quick Fruit Cobbler
Canned pie filling and Bisquick® mix are the quick-fix secrets to these yummy home-style cobblers.
1can (21 ounces) cherry, peach, blueberry or other fruit pie filling
1cup Original Bisquick® mix
1/4cup milk
1tablespoon sugar
1tablespoon butter or margarine, softened
1. Spread pie filling in ungreased 1 1/2-quart casserole. Place in cold oven. Heat oven to 400ºF; let heat 10 minutes. Remove pan from oven.
2. While pie filling is heating, stir remaining ingredients until soft dough forms. Drop by 6 spoonfuls onto warm pie filling. Sprinkle with additional sugar if desired.
3. Bake 18 to 20 minutes or until topping is light brown.

REALLY EASY!!
1 box Jiffy yellow cake mix
1 stick of butter or margarine, melted
can of blueberry or blackberry
Spray the pan you are using with PAM (I use a 9 x9 ). Pour the fruit in. I then mix the butter and cake mix together and pour over. Bake 350 for 20 minutes (I never time it).
I do not know if it is a cobbler, but it is easy and WONDERFULLY rich!

I got this recipe from a very old eagle brand advertising recipe (out of granny's recipe book). I am a sucker for cobbler and love this recipe!
1 pint blueberries (fresh or frozen)
1 (14 ounce) can sweetened condensed milk (I prefer Eagle Brand)
2 teaspoons grated lemons, rind of
3/4 cup butter or margarine (cold)
2 tablespoons butter or margarine (cold, in addition to above)
2 cups biscuit mix, divided (I prefer Jiffy)
1/2 cup brown sugar
1/2 cup chopped nuts (any will do, I prefer almonds)
vanilla ice cream (for topping) (optional)
blueberry sauce (for topping) (optional)
Preheat oven to 325 degrees.
Combine blueberries, condensed milk, and lemon peel in bowl.
In large bowl, cut 3/4 cup butter into 1 1/2 cups biscuit mix until crumbly; add blueberry mixture.
Spread in greased 9-inch square baking pan.
In small bowl, combine remaining biscuit mix and brown sugar; cut in remaining butter until crumbly.
Add nuts, sprinkle over cobbler.
Bake 1 hour or until golden brown.
Serve warm with ice cream and blueberry sauce.
