The answer is obviously 5, regardless of what the children are named. The fact that one of the kids is named Bob makes no difference. Its plainly spelled out that she has 2 sons and 3 daughters, which equals 5 children.
Now if you had said "Bob's mom has 2 sisters and 3 brothers. How many children does she have." Then you would have had a proper riddle on your hands.

This seems too simple to be true. Bob is one of the 2 sons obviously, and he has 3 sisters. So 5.
