My Mom used to add raw crumble Italian Sausage and a can of Rotel tomatoes in her meatloaf. Follow any meatloaf recipe but add these two ingredients and it gives a different twist on the regular old meatloaf recipe. All of these answers sound great, it is fun to experiment with different menu items that we are tired of, it just takes a little tweeking to make it something brand new.

This is the best meatloaf I have ever had. It is from Food TV's Paula Deen. She had a whole episode about food Elvis would have liked. This is her Cheeseburger Meatloaf with Cheese Sauce. Excellent.
1 pound ground beef
1 teaspoon House Seasoning (garlic powder, black pepper, and salt mix)
1 medium onion, chopped
1 medium bell pepper, chopped
1 cup grated Cheddar
2 tablespoons Worcestershire sauce
1/2 cup sour cream
1 cup crushed crackers (recommended: Ritz)
1 teaspoon seasoned salt (recommended: Lawry's)
2 slices white bread
Sauce, recipe follows
Preheat oven to 350 degrees F.
Mix all ingredients together, except the bread slices and Sauce. Shape into a loaf. Line a 1 1/2-quart loaf pan with the bread slices. Place meatloaf on top. Bake loaf for 45 minutes. The bread absorbs the grease and should be discarded after loaf is removed from oven.
Sauce:
1 (10 3/4-ounce) can condensed cream of mushroom soup
1 cup milk
1 1/2 cups grated Cheddar
Chopped onions, optional
1 bunch fresh parsley leaves, chopped, optional
Heat the soup and milk over medium heat; add the cheese. Add the chopped onions and parsley to the sauce, if desired. Pour Sauce over the meatloaf or pass at the table.

Brown Sugar Meatloaf
1/2 cup brown sugar
1/2 cup ketchup
1 1/2 pounds lean ground beef
3/4 cup milk
2 eggs
1/12 tsp. salt
1/4 tsp. black pepper
1/4 tsp. ground ginger
3/4 cup finely crushed saltine crackers
Preheat oven to 350 degrees. Lightly grease a 5 x 9 inch loaf pan. Press the brown sugar in bottom of prepared loaf pan and spread the ketchup over the sugar. In a bowl mix thoroughly all remaining ingredients and shape into a loaf pan. Place on top of the ketchup. Bake in a preheated oven for 1 hour or until juices run clear.

I really like BennyG's answer. I have a great holiday recipe that just fits with BennyG. If you want to make a great impression for a holiday dinner. Stuff 1 red, 1 yellow and one green bellpepper, cook as you would any stuffed bellpeppers. When they are done, cut them in quarters and arrange them on a large plate alternating colors to form a large star. In the center place a bowl of mashed potatoes. Your guest will think you slaved for hours and it looks pretty too.
Use cheap hamburger for starters. more fat contene, therefor more flavor. Add spicy breakfast sausage, lots of garlic chopped onions, bell pepper add mayonaile or sour cream to moiisten. form into meat loaf, bake 375 for about 2 hours draining grease often. any other chopped vegetables may be add, it's a matter of choice.

Yes, make Mexican Meat Loaf..to about a lb of meat (I use ground round) add small can green chilis, about 1/2 cup Rotel tomatoes, drained slightly (I use HOT), chopped onions 1/4 cup, chopped bell peppers 1/4 cup, use a binder, bread crumbs soaked in egg, or your choice, a little salt and fresh pepper, cilantro and garlic are good too, bake at 350 I think about 1 1/4 hours (I use thermometer) For topping mix sour cream and Rotel Tomatoes leave a room temp while baking, serve on the side. Yummy.

THE ULTIMATE MEATLOAF
2 cups Green Giant Harvest Burger Crumbles, thawed
(Or any other fake hamburger)
1 cup dry breadcrumbs
1 cup quick oats
1/3 cup ketchup
1 Tb onion powder
1 Tb Ener-G Egg Replacer (dry)
1 cup hot water
Pan spray
Tomato Sauce (I omitted this because I couldn't remeber my mom using it)
In a large bowl, put burger, crumbs and oats. Add ketchup, onion powder, garlic powder and Ener-G. Add hot water and mix well. Form into a loaf and put in sprayed baking pan. Pour tomato sauce over loaf. Bake at 325 F for 40-45 mminutes, basting with more tomato sauce once or twice. Serve with additional sauce poured over.
Don't plan on going anywhere soon because this stuff sits like a tasty brick. Enjoy!

CRANBERRY MEATLOAF
A meatloaf recipe with a unique ingredient combination. This meatloaf contains lean ground beef, cranberry sauce, ground ham, a little brown sugar, and seasonings.

NGREDIENTS:
1/4 cup firmly packed brown sugar
1/2 cup whole cranberry sauce
1 1/2 pound ground beef, lean
1/2 pound ground cooked ham
3/4 cup evaporated milk
3/4 cup cracker crumbs
2 eggs, beaten
2 tablespoons chopped onion
PREPARATION - Spread sugar over bottom of greased loaf pan. Mash cranberry sauce; spread over sugar. Combine remaining ingredients except bay leaves. Shape into loaf; place on cranberry sauce. Bake at 350° for about 1 hour. Remove bay leaves before serving. Serves 8.

Easy-- forget meatballs--
2lb minced beef
1 onion
salt n pepper
thyme(pinch)
1 clove garlic
1 tsp olive oil
1 egg
Mix all ingredients together-- bind it all with the egg
Put in a grease proof or buttered meatloaf dish
cook in a hot oven about gas mark 4 for 35 minutes
and Bobs your Aunty (as the saying goes)

Amish Meatloaf
INGREDIENTS:
2 pounds ground beef
2 1/2 cups crushed butter-flavored crackers
1 small onion, chopped
2 eggs
3/4 cup ketchup
1/4 cup brown sugar
2 slices bacon
1 cup ketchup
2 tablespoons vinegar
3/4 teaspoon salt, or to taste
2 tablespoons prepared yellow mustard
1/2 cup brown sugar

DIRECTIONS:
Preheat the oven to 350 degrees F (175 degrees C).
In a medium bowl, mix together ground beef, crushed crackers, onion, eggs, 3/4 cup ketchup, and 1/4 cup brown sugar until well blended. Press into a 9x5 inch loaf pan. Lay the two slices of bacon over the top.
Bake for 1 hour in the preheated oven, or until cooked through. While the loaf bakes, mix together the remaining 1 cup ketchup, vinegar, salt, mustard and 1/2 cup brown sugar. Spread over the top of the meat loaf for the last 15 minutes of baking.

Would you settle for my second choice?
Ad to the meat an 1 egg 1 union and 1 garlic (yes whole) chopped beyond recognition.
Make meatballs about an inch in diameter.
Boil in salt water for 10- 15 minutes.
Let dry then bake in hot oil until brown. (very fast)
Drop them in the peanut sauce.
Peanut sauce:
Chop union ad a tablespoon of sugar. Mix until sugar seems gone. In a medium hot pan and stir until it starts to brown. Ad soy sauce. Ad milk (start with one cup) When hot ( not cooking) ad tablespoons of peanut butter.
Keep adding milk and peanut butter until a smooth but firm 'paste' is made. Finally ad some hot sauce or Tabasco.

take your meatloaf meat split it into 2 parts 1st part add to the bottom of a bread pan spread out and make a trench in the middle of the meat add cooked mac and cheese cover with rest of meat seal the best you can and cook for about 1 hour or til done cut into slices and injoy a little gravy never hurts
