I'm interested to know. Although my cooking is wonderful, I just wanted to know what other people do for chicken.

Rosemary Dijon Chicken~
3 servings

3 chicken breasts
4TB olive oil
2TB dijon mustard
1 TB minced garlic
salt and pepper
9-12 sprigs rosemary

1. Dice chicken into 1-1 1/2 in cubes
2. Salt and pepper
3. Mix oil, mustard, and garlic, and rub on chicken, and marinate for an hour or more.
4. Thread Cubed chicken onto rosemary sprigs, starting on the bottom side and move the chicken towards the tip.

I baked them at 375 for about 15 minutes although you could grill if desired.

Dijon Beer blanc

6TB basil vinegar
1/2 C beer (I used a belgian ale)
2-3 shallots minced
1/3 stick butter, cut into small cubes
dijon mustard

combine vinegar, beer and shallots in a pan and reduce to about 1/2 or 1/3. whisk in cold butter, and small ammounts of dijon alternatly, until smooth and creamy.

Served w/ grilled asperagus, cherry rice

Petti di Pollo alla Bolognese

4 skinless, boneless chicken breast halves,
about 1/2 lb (250 g) each
Salt and freshly ground black pepper to taste
Flour for dredging
3 Tbs (45 ml) butter
2 Tbs (30 ml) olive oil
8 thin slices prosciutto ham, about 2x4 inches (5x10 cm)
8 thin slices Fontina or Bel Paese cheese,
about 2x4 inches (5x10 cm)
4 tsp (20 ml) freshly grated Parmesan cheese

Using a very sharp knife, carefully slice each chicken breast in half horizontally, to make 8 pieces. Place between layers of wax paper or plastic wrap and pound with the flat side of a cleaver or the bottom of a heavy saucepan to flatten slightly. Season with salt and pepper and dust lightly with flour, shaking off the excess.
Heat the butter and olive oil in a heavy skillet over moderate heat, and brown the chicken to a light golden color, 3 or 4 slices at a time. Do not overcook.
Transfer the chicken to a baking dish large enough to hold
them comfortably. Place a slice of prosciutto and then a slice of
cheese on top of each. Sprinkle with the Parmesan cheese and bake uncovered in a preheated 350F (180C) for about 10 minutes, or until the cheese is melted and slightly brown. Serves 4.

One of my favorite is:
Orange Glazed Chicken

Easy but delicious

1 4-6 lb Roasting chicken, cleaned
1 small can frozen oj, thawed
1 large orange
2 med onions, peeled and halved
1/2 stick melt butter
1/4 teaspoon curry powder
salt and pepper

In a small sauce pan melt butter and add frozen oj and curry powder. Add a bit of the orange zest from the whole orange.
Place a cooking rack in a baking dish & cover with a large piece of foil. Place chicken on the foil. Salt and pepper the inside and outside of the chicken. Slice the orange into quarters and place it, with the sliced oinion, inside the chicken. Uses the Butter/Oj mix as a baste mixture. Brush on the chicken. Wrapt foil around chicken (but not tightly) Baste with the OJ mixture every 15 min. Use plenty. Bake 1-1.5 hrs. Skin with be crisp and slightly sweet. If you want a gravy-uses the drippings and even add some of the OJ mix. Serve with rice pilaf. YUM. Enjoy

I bought a 50 dollar rotisserie a few years back to
make chicken like the deli's do! It works great! Seals in the
juices well.
I make 3 meals out of 1 chicken.
We first eat the chicken for dinner. Put the rest in the fridge.
Next I pull the meat off and make chicken salad for sandwiches.
Then finally I use whats left of the chicken by boiling it in
a large pot and make home made chicken noodle or chicken
wild rice soup!
Also I bake chicken. add sauces like BBQ or honey mustard.
Make chicken Alfredo! Cook chicken add seasonings, lots of garlic,salt & pepper! Then add 1/2 cup butter 1/4 c milk
and 1/2 cup Parmesan cheese to cooked noodles and ck and mix!
Make Chicken Fajitas! Lots of green&red peppers and onion taco seasoning and soft shells!
Chicken stir fry!

i have a great way, you might know this already, what i do sometimes is i take a whole chicken and i clean it out ( no gizzrds ) then you can put whatever spices you want on it then you put your grill on low, not too low then i take a 16 oz beer can and i empty half of the beer out of it, then you take the beer car half full of beer and i take the top of the can ( the part where you'd drink out of ) and stick it in the chicken, ( the part of the chicken where you'd stuff it if you were going to ) put the can halfway up into the chicken, then stand it up on your grill, close your grill and let it cook for about an hour and a half to two hours, its very good, its kinda redneck thing to do, but its good something about the beer can cooks the chicken from within but you should try it

I make chicken many many ways, but one very nice way is to cut it into pieces- remove skin- and brown in deep oven casserole dish in oven at the bottom with chopped onions in a little bit of cooking oil . Add shredded cabbage, carrots and big chunks of potatoes. Add add salt and pepper to taste and a glass of warm stock of any kind. Cook until done! Test with fork. You can use any veggies for this.

When cooking chicken breasts, I either bake it or fry it (no batter). Once the chicken is fully cooked, I add 2 cans of pineapple (do not drain juice), minute rice, 1 tsp. garlic powder, 1/4 cup of catalina dressing and let simmer together. It is really good! It is called Aloha Chicken.

Roast chicken- Marinate it with butter, salt,honey, dark soya sauce for 2 hours. Use microware convention oven med-high mix roast at 200degree Celsius for about 35 minutes. Serve with bake potatoes and salad.

Oriental style - Marinate chicken piece with oyster sauce, salt and young ginger (cut thin
slices). Then steam. When cook pour 1-2 TBsp rice wine. Garnish with coriander leaf.
Serve with rice.

Boneless skinnless chicken breast.
Marinated (various flavors)
beaten down to 1/4 inch thickness
Propane grill (very hot before cooking)
Lower shelf throw it on for 6 minutes on one side
4 minutes on the other
Cut the thickest to make sure it is cooked
Eat.
It is always juicy, and great tasting.

For oven fried chicken I take two bone-in breasts with the skin and marinade in buttermilk for at least 4 hours. preheat oven to 400. Drain off buttermilk and pat breasts dry. Take a half stick of butter and melt it in microwave. I then brush melted butter on breasts, using all the butter. Season however you like. Bake for 35-45 minutes. Turns out sooo juicy.
