Generally, it means that regardless of things you may have done to hurt her or upset her, she sees all the things that you do to care for her and help her and she's grateful for that. More than likely you've done something that has meant a lot to her recently and she sees what a wonderful person you are. Guys say it too. Nobody really know what "everything" includes, but just go with it and be happy that you've done something to make her happy.
