Why the name Chicken of the Sea?
In the "old days", fishermen referred to the white albacore tuna as "chicken of the sea". It was called this because the white color and very mild flavor reminded them of chicken. The founder of the company thought this would be a unique name for a brand of tuna, and the Chicken of the Sea brand is now known worldwide.

You know how chicken is so common here on land? Well, the tuna is the most common thing we eat from the sea! So tuna is the chicken of the sea.

It could be interpreted by the public as: Chicken is very prevalent and easy to find, and so is tuna in the sea. Ergo, chicken is to land as tuna is to the sea. It is a clever slogan, none the less. Good question !

In the early 1900s, the company wasn't known by its familiar fowl moniker and sold other foods in addition to tuna. But fortune shined on them when they became the first food company to can "light tuna." The mildly flavored fish became the company's trademark product, and its owners sought a catchier name for their canned fish. When asked about the flavor of the new light tuna, many customers remarked, "it tastes like chicken," -- so the company began to market the light tuna as "Chicken of the Sea." The ad campaign was so successful that the company eventually renamed itself after their famous slogan.

Because it's white meat, like chicken.
The bigger question is: Why do they use a mermaid as their symbol? Are merpeople in the can as well? Are they an army of sea-chicken hunters? And is their tail a tuna tail?
