2 cups flour
1/2 tsp salt
1/2 tsp thyme
1/2 tsp basil
1/2 tsp oregano
1 tbsp celery salt
1 tbsp black pepper
1 tbsp dry mustard
4 tbsp paprika
2 tsp garlic salt
1 tsp ground ginger
3 tbsp MSG (Accent)
Mix all ingredients well in a large bowl.
Dip chicken pieces in beaten eggs
Then turn them over in regular bread crumbs (commercial)
Finally plunge them in the flour-spices mixture (above)
Heat oven to 350 degrees
Place chicken in a tray and cover with foil (shiny side out)
Cook 40 minutes.
Remove the foil then cook for another 40 minutes
Baste lightly with oil 5 minutes before the end
Let stand 5 minutes and serve

Buy the worst quality chicken you can find, fed on growth hormones, dead chickens, and shredded newspaper, and full of e coli bacteria. Don't wash it. Dip it in some flour and seasoning salt, and then add a little more salt, and a little sugar, and some preservatives, and a little more salt, then fry it in lard that has been used at least 4 or 5 times previously. Don't fry it hot, though: make sure you fry it low, so it will soak up as much grease as possible.

I don't know how to make the original style but I do make the extra crispy at home. All the extra crispy chicken has in it is breading flour, salt, garlic powder, poultry seasoning, white pepper, and baking soda. You wet the chicken (I use milk and egg) then dip and then wet it again and double dip. Fry in vegetable shortning and yum!

Use 2/3rds flour and 1/3rd cornmeal. Season with salt, pepper, garlic, sage, and paprika. Use milk and egg for the batter.
I begin with hot oil, reduce the heat, and cover. My chicken doesn't absorb the oil like KFC, though. I think you want to cook with a small amount of oil at at low temp to accomplish that greasy touch.
