One part of the holy book says that man was created after animals were:
"And God made the beast of the earth after his kind, and the cattle after their kind ... And God said, Let us make man ... So God created man in his own image." (Genesis 1:25-27)

But then it says man was created before animals:
"And the Lord God said it is not good that man should be alone; I will make a help-meet for him. And out of the ground the Lord God formed every beast of the field, and every fowl of the air, and brought them to Adam to see what he would call them." (Genesis 2:18-19)

Which is it?

You can pick and believe whichever one you want. That's what everyone does with the Bible, they pick and choose which parts to believe. It's a big book of contradictions!

I believe that you need to look closer and read the WHOLE few chapters about creation. I'm not sure what translation you're using or what, but here's what I've found:

-God made the wild animals according to their kinds, the livestock according to their kinds, and all the creatures that move along the ground according to their kinds. (Genisis 1:25)

-Now the LORD God had formed out of the ground all the beasts of the field and all the birds of the air. He brought them to the man to see what he would name them; and whatever the man called each living creature, that was its name. 20 So the man gave names to all the livestock, the birds of the air and all the beasts of the field.
But for Adam no suitable helper was found. 21 So the LORD God caused the man to fall into a deep sleep; and while he was sleeping, he took one of the man's ribs and closed up the place with flesh. 22 Then the LORD God made a woman from the rib he had taken out of the man, and he brought her to the man. (Genisis 2:19-22)

As you can see, in the second verse youve chosen, God didn't make animals after man at all. He was having Adam look for a partner by going through all the animals. When Adam didn't find one, God made Eve.

In the Jewish style of writing, an overall picture is first given, and then details are given after wards. Genesis chapter 1 clearly states that the animals were created first, and then man. By the way, both were created on the same day, including the dinosaurs.

In Genesis chapter 2, more details are given. All of the animals have been created, and spread throughout the world. Then God created Adam, and placed him in the Garden. In the Garden, God made one of each animal to bring before Adam so Adam could name them. And after that, God created Eve.

There are no contradictions in the Bible, it is the inerrant, inspired Word of God.

the value and importance of Gods creation seems to increase as He is creating the things he is to love. Just as a parent prepare the environment for a new child so did God prepare the environment for Adam. Eve being created after Adam doesn't state the God loved her more because of her latter arrival status. God did however grant her the largest part in producing new life. As a balance she was cared for and cherished by Adam and the responsibility of all ladies is that we correctly use the gift of influence we've been given while humbly submitting to the authority of Godly men. God is so amazing and he word applies today as it did in the Day Adam. This first text is much richer in wisdom than many of us think. I have only shared thoughts of my human brain. Pray for God to show you what it is you are to reap from His word. He is good to answer a heart truly set on knowing Him. I look forward to hearing about what is reveled to you. The bible is very specific that GOD created man after the animals. In the verses in Chapter 2 GOD is bringing the animals from all around for Adam to name and give charge over. They were all ready created, he simply brought them from the where they were to the newly created master that GOD had intended to rule over the world and care for it.

Humans were last in the chain of creation. What you read in Genesis 2 is like a summary of the previous chapter not a chronology. It was typical of writing at that time to write first in chronological order then write a summary, if you will, of those events.

When interpreting and reading the bible we must be conscious that it is an ancient book and it doesn't necessarily follow our modern standards of writing. Therefore we shouldn't rush into judgment about things we don't fully comprehend.

The real answer is that Adam and Eve were created AFTER the animals. Adam was lonely when he looked at all of the animals and saw that they all had mates. Therefore, God decided to create him Eve using Adam's rib bone. The animals were already there, they just had no names. Adam and Eve named them all, and therefore, the animals were there before the humans.

After God made man, he brought all the animals to see Adam and so that he could name all of the animals.

In he beginning of the bible - God made the heavens and the earth first, nature, animals and then man!

Many places in the bible are repeated or phased differently, it depends on who saw things as what like: Matthew, Mark, Luke and John: similar but different!

Man was created last. the reference u mentioned in the second paragraph pertains to God getting all the animals from wherever they were at to go to Adam so that he could name them..it does not refer to creation.
