Try corn on the cob, pasta salad with an Italian vinaigrette dressing, or a great vegetable recipe that I just found:

Summer Vegetable Bowl

4 slices bacon
12 small white onions
1 small green pepper, diced
2 cups hot water
1 lb green beans
6 ears corn, cut into thirds
2 tsp salt
2 tsp sugar
1/4 tsp white pepper
6 small zucchini, cut into 1 inch chunks
2 lg celery stalks, cut into 1 inch slices
1 large tomato, cut in wedges

In Dutch oven, over medium heat, cook bacon until crisp, drain bacon on paper towels. To the drippings in the pan, add onions and green pepper, cook until golden; add hot water and next five ingredients. Bring to a boil, reduce heat to low; cover; simmer 10 minutes.

Add zucchini and celery; cover and cook 8 to 10 minutes, until vegetables are tender. With a slotted spoon arrange the vegetables in a large, shallow bowl. Crumble bacon and sprinkle over the top. Arrange tomato wedges on top.

Desserts are always great to bring when refrigeration isn't an issue. My favorite item to make for picnics and other gatherings is, well...uhm...I don't know the name of them. But, here are the directions:

Purchase a large pre-made chocolate chip cookie dough roll from the grocery store. Divide the roll evenly between the 24 mini muffin cups. I gently roll each cookie section before dropping it into the greased (sprayed) cup. Cook for approximately 10 minutes until golden brown. While the cookies are baking, unwrap 24 miniature Reese's peanut butter cups. AS SOON AS the cookies come out of the oven, press one peanut butter cup into the middle of the cookie cup. Press it down until the top of the peanut butter cup is flush with the top of the cookie cup. Continue until all 24 are complete. Let these sit until cool before removing them from the pan. Your friends and family with rave for weeks! They're terrific!!

Potatoe salad and macaroni salad can both be made to be eaten hot or cold. They usually can sit for hours and still are edible. Or my sister made a taco salad for Father's Day and it was really good and does not need to be cold. It stayed well for the day and tasted really good. She used fritos as the chips and stirred in lettuce, cheese, used ground beef, and salsa. Very good.

1 (11 ounce) can mandarin oranges
1 (8 ounce) can crushed pineapple, drained
3 bananas, sliced
2 cups flaked coconut
2 cups miniature marshmallows
1 cup pecan pieces
1 (16 ounce) container frozen whipped topping, thawed
1 cup maraschino cherries


Also can add strawberries, Fruit cocktail and melon balls

When I am doing the "cook out thing" I like to take something like baded beans. This can be cooked, then covered with tin foil and wrapped in a towel to keep it warm.

A dessert like pie, cake, or a cobbler. You could also bring baked beans in a metal pot that can stay warm on the grill.

HOT GERMAN POTATO SALAD
3 lbs. potatoes
1 lb. bacon (reserve bacon fat)
1 onion - diced
1 tablespoon flour
1/4 cup white vinegar
1/2 cup sugar
salt and pepper to taste
1 cup water
Bring a large pot of salted water to a boil.
Add potatoes; cover and simmer until tender, about 20 minutes.
Place bacon in a large, deep skillet. Cook over medium high heat until browned and crisp and transfer with a slotted spoon to paper towels to drain. Crumble or chop bacon, set aside.
Pour off all but 3 tablespoons fat from skillet and sauté onion over moderately high heat, stirring, until softened, about 3 minutes.
Add flour, vinegar, sugar, salt, pepper and water and simmer 2 minutes.
(sauce will be thick)
Add bacon and potatoes to skillet and stir until coated. Cook until heated. Serve warm.

ZUCCHINI BREAD
3 eggs
1 cup vegetable oil
2 cups sugar
2 cups coarsely grated zucchini (loosely packed)
1 Tablespoon vanilla extract
2 cups flour
2 teaspoons baking soda
1 teaspoon salt
1/4 teaspoon baking powder
1 cup walnuts - chopped
In a large bowl, beat eggs until light and frothy.
Mix in oil and sugar.
Stir in zucchini and vanilla extract.
Combine flour, baking soda, salt, baking powder and nuts; stir into the egg mixture.
Divide batter into 2 prepared loaf (8x4 inch) pans.
Bake at 350 degrees for 60 minutes, or until done. Cool for 10 minutes in pan and then cool completely on wire rack.

Any marinated, vinegar-based salad. Take Roma tomatoes, zucchini or cucumbers, purple onions, all sliced very thinly, add salt and pepper and a good vinegar and toss. You can make this a day ahead.
