Mix an egg yolk into the mince meat (an OXO cube is also good to add)
You should also let the made burgers sit in the fridge for a few hours under cling-film to *set*
PS - Any large chunks will make the burger fall apart, so chop onions / garlic / mushrooms etc...really finely.

For the binding, I'd use a beaten egg - very simple and effective. Breadcrumbs bulk out the meat, but I'd rather use a finely diced onion to flesh it out - adds more flavour, too. Season with lots of pepper, and a bit of diced chilli, and, IMHO, you have a nigh-on perfect burger. Make sure you use really good quality mince (or buy a steak, and mince it yourself).

Obviously egg and breadcrumbs are a popular choice, but I also like to add a little sauce (ketchup and bbq are my favourites) just to give it a hint of those flavours. Chilli sauce works too if you like a smidge of fire.
I find this especially handy as a few of my friends do not eat eggs (although maybe I just have weird friends!!!)

One large-size egg, raw, mixed into a minimum of 1 pound ground beef, ought to do the trick. (One egg can bind up to a kilo of ground beef.)
Thing to remember: shape the patties by hand, and don't squeeze or compact them too much, otherwise they'll cook very dry.

a beaten egg gradually added till you get the right consistency you don't want to make it too sticky, if it still seems a bit dry add milk a little at a time.

crackers helps to bind you can mix an egg in with the meat and crackers also...good luck they also won't change the flavor
