He wouldn't have been a Muslim because he predates that religion- however he is the patron saint of Turkey and is thought to have come from that region. He was adopted during the crusades by English Knights when they heard his stories of bravery in fighting dragons.

He was born in Asia Minor, I think that was the reason for the misconception. But he was born centuries before Turks came to Asia Minor. His mother was Palestinian (not Turkish) and he grew up in Palestine. His father was a soldier of the Roman Empire from Capadocia (an island off Asia Minor; I would think that means Greek origin).

Saint George (c. 275/280–April 23, 303) was a soldier of the Roman Empire who later became a Christian martyr. Immortalised in the tale of George and the Dragon, he is the patron saint of several countries and cities, including England, Georgia and Moscow, as well as a wide range of professions, organisations and disease sufferers.

The traditional account of his life is considered to have originated in the 4th century. According to it, George was born to a Christian family during the late 3rd century. His father was from Cappadocia and served as an officer of the army. His mother was from Lydda, Palestine.

Born Lydda, Palestine
Died ca. AD 303, Nicomedia, Bithynia

More accurately, he was from Palestine. He was born into a Christian family, before the Islamic religion had been created. He is the national saint of England and Georgia, as well as the patron saint of Moscow and the Lombardy region of Italy.
