Doughnuts can be made using a yeast-based dough (raised doughnuts), or a special type of cake batter. Yeast-raised doughnuts contain about 25% oil by weight, whereas cake doughnuts' oil content is around 20%, but cake doughnuts have extra fat included in the batter, before frying. Cake doughnuts are fried for about 90 seconds, turning once, at between 190 and 198 degrees Celsius.

Donuts are usually fried, but you can find some recipes that requiring baking, too, for lower fat content. Special donut baking pans are available at cooking stores and online. Yeast in the dough creates lighter "raised" donuts, while dough without yeast creates a cake-type variety.
Ingredients for Baked Doughnuts (sixteen)
Set a sponge of the following ingredients:
1 cup lukewarm milk
1 cake compressed yeast
10 ounces sifted pastry flour
When this sponge is light, stir into it:
¼ cup sugar
1/3 cup oil
Allow it to rise again. When light, add:
¼ cup sugar
2 beaten eggs
1 teaspoon salt
8 ounces sifted pastry flour
Instructions
Mix thoroughly.
This will be too soft to knead.
Set it in a warm place to rise.
When it is light, knead it together.
Take the dough out onto a floured board, roll it out three-fourths inch thick, and cut with a doughnut cutter.
Lay the doughnuts on an oiled pan one inch apart, and set in a warm place to rise.
Allow them to rise about one-eighth inch, not more, and then bake.
Make a sugar sirup by dissolving 1/4 cup sugar in a 1 tablespoon hot water.
When the doughnuts are baked, brush each one over with the sirup, and roll in granulated sugar.

eeewww - baked donut? that's just weird.

sounds like a cupcake with a hole in the middle.

You need a trip to Krispy Kreme to see how donuts are made.... they do it right there in the store, and you can get a warm one right out of the huge vat of hot oil....

Both. You can fry them or bake them. The difference between them and regular donuts is the batter.
