If I were you I would go with your favorite foods for the fall. Include meats of the fall such as turkey, ham or roast beef, etc. I would include squashes are also a good choice, with green beans, or basic vegetables. Include options for vegetarians incase you do have some coming to the wedding, and also for diabetics, but make these dishes ones that others will eat too so they don't go to waste. It all depends on how formal you want to be. Try some of these websites for ideas on a menu. I hope this helps.

For a fall wedding, which is what we had last year, we went with 2 entrees - fish and meat. We didn't give people the option to choose, both came with each plate. It came out to about $50 a person. I would say no more then $100 a plate - that is just ridiculous to spend that much.

It's natural to go with the "tastes" of the season. Maybe pork loin with a bourbon apple compote, butternut squash, hearty salads and a nice wild mushroom soup. You get my drift? Roasted chicken would definitely fit in well, as would pumpkin soup.
You can spend whatever you like. Go with what your budget will allow, what you want to dine on, and how formal you want the event to be (e.g. buffet versus plated).

Price really depends on your area....for our wedding, we paid $12/person....for my friend's upcoming wedding, it is $50/person....but she lives in a big city vs the small town we live in.
Some good things to have would be turkey, roast beef, or ham, scalloped potatoes, maybe a soup or two...some sort of pumpkin flavored something would be good for the cake, but personally, I would probably stick with a traditional cake.

Go for butternut squash soup, then a lovely roast lamb with roast potatoes and vegetables then hot apple pie with cream and custard for dessert.
