Overproof is used when a brand of spirit (usually rhum) have 2 "qualities" of the same spirit Ex: Bundaberg underproof (Australia) 37,5% alc(75 proof), Bundaberg overproof 73.5% alc(147proof). Proof is double the alc content(think its an American system). I think you need to go over 100 proof to be overproof....
The underproof just got more added water....

Proof refers to the percentage of alcohol in the booze at hand. It is twice the actual percentage. An 80 Proof booze has 40% alcohol in it by volume. Ergo, 1000cc of 80 Proof liquor contains 400cc of pure alcohol.
