Most viruses have at least some incubation period. When a virus enters a host organism it must encounter the right type of cell in which it can reproduce. Whether or not a virus encounters these cells depends on many things including the host organism's immune system, the viral type, and the means of contact.
I haven't seen "28 Days" but visible systemic symptoms that occur in a matter of seconds is almost impossible. Even in the most aggressive and immunogenic viruses.

Yes, it would show up on the test but symptoms may not start showing. Symptoms of HIV (AIDS) may not be apparent for years after the infection occurs, which is why HIV testing is the only sure way to know if you are HIV-positive. Those who do not treat their HIV symptoms or infections may develop AIDS within 12 to 13 years after they are initially infected, although a small percentage of people have developed AIDS within 3 years of becoming infected with HIV. Treatment of HIV may delay or even prevent AIDS, which is why it is so important to find out as early as possible if one has become infected. (Please be reminded that HIV means the virus causing the infection,while the AIDS are symptoms of infection).

Ebola Virus.
The first recorded case (not the index case) was Mabalo Lokela, a 44-year-old schoolteacher just returning from a trip around Northern Zaïre, who was examined at a hospital run by Belgian nuns. His high fever was diagnosed as possible malaria, therefore he was given a quinine shot. Lokela returned to the hospital every day. A week later, his symptoms included uncontrolled vomiting, bloody diarrhea, headache, dizziness, and trouble breathing. Later, he began bleeding from his nose, mouth, and rectum. Mabalo Lokela died on September 8, 1976, roughly 14 days after the onset of symptoms.

The "Flu" Virus, usually people will start to show signs of fatique,
feel nauseated,have cold and hot sweats ,develop headaches
and chills.Feeling weak is also a sign of the Flu, good remedies
are bed rest, good old fashioned chicken soup,water,tea with
honey and lemon in it and of course it is always wise to get your
flu shot well ahead of the flu season.

the flu virus...the symptoms can manifest about a few hours after infection...
the HIV virus is one of the slowest...taking about 6 months for the symptoms to appear
