Ceviche
Makes 4 servings
Ingredients:
1 pound of good white fleshed fish
juice of 6 or 7 limes
1 small onion, diced
3 ripe Roma tomatoes, diced
4 pickled serrano chilies, sliced
4 tablespoons olive oil
1 tablespoon vinegar
1/2 teaspoon oregano
salt and pepper
1/2 cup fresh chopped cilantro
2 ripe avocados
Preparation:
Rinse the fish in cold water, skin and cut into small pieces. Place in a glass bowl and pour juice from the limes over all. Let stand in the refrigerator for about 3 hours, turning fish pieces with a wooden spoon from time to time.
Add the onions and tomatoes to the fish. Add the sliced chilies, olive oil, vinegar, oregano, salt and pepper and cilantro. Let stand another 20 minutes.
Serve ice cold with fresh fried corn tortilla chips.
Mojito
Yield: 1
Ingredients
1 1/2 oz light rum
4 mint sprigs; up to 5
1 lime wedge
1/2 oz fresh lime juice
7 up
Instructions
Begin by muddling together light rum, mint, lime, and fresh lime juice.
Cover
with ice and shake well and serve in a highball glass topped with 7-Up.
Garnish with a mint sprig.

Classic Mojito
Ingredients:
- 1 1/2 oz light rum
- 1 tbs superfine sugar
- Lime wedges
- Club soda
- Mint sprigs
Muddle mint leaves, superfine sugar and lime in a mixing glass. Add 1 1/2 oz light rum and ice in a cocktail shaker and shake. Strain the mixture into a tall glass and top with club soda. Garnish with fresh mint sprig. Sugarcane syrup can be used to replace superfine sugar.
Mango Mojito
- 2 1/4 oz Players Extreme Mango Infused Rum
- 2 splashes of club soda
- Muddle 4 sprigs of fresh mint with a squeeze of lime
Mix all ingredients. Serve in a highball on the rocks. Garnish with a lime wedge and mint sprigs.
Blue Mojito
- 1 oz. HPNOTIQ liqueur
- 2 oz. Light Rum
- 3 oz. Club Soda
- 6 fresh mint leaves
Shake HPNOTIQ liqueur, light rum and mint leaves with ice in a cocktail shaker. Strain into a rocks glass and top with club soda.
Pina Mojito
- 1 1/2 part Mojito Club
- 2 parts pineapple juice
Combine over ice and garnish with mint leaves
Cuban Breeze
- 2 parts Mojito Club
- 1 part Vodka
- 1/2 part Grapefruit Juice
- 1/2 part Cranberry Juice

try going on a peruvian recipe website. just do a search for both of those and pick a recipe that was rated high and read what other people say about the recipe. or a cuban recipe site for the mojito.

GREEN RICE
1 lb. cooked rice (about 3 c. uncooked)
Chicken broth
1/2 lb. pork meat
1 chicken
1 bunch parsley
4 green peppers
1 bunch green onions
1/4 lb. butter
1 tbsp. curry powder
2 cans cream of chicken soup
1 tbsp. La Choy Sauce (La Choy Brown Gravy Sauce)
2 hard boiled eggs
1 pkg. grated Mozzarella cheese
Boil the chicken with salt, pepper, garlic, paprika, oregano and cumin. I used the pressure cooker to do it quickly. When the chicken is done the bones leaving pieces of meat of regular sizes.
Cook your pork meat with salt, pepper, oregano, cumin, garlic (and if you have the Mojito Criollo) I use that also. Cut the meat in pieces and fry same in skillet until it is cooked.
Cook rice with chicken broth instead of water. I use 1 cup of rice for 1 cup of consomme, and then I add about 1/4 of a cup more of water.
Chop the green onion, green peppers and parsley. Put it all in a skillet with the butter, curry powder and La Choy Sauce and bring it to boil, stirring occasionally. Then add the pieces of chicken and pork and let it cook for a little while, so they get the sauce flavor, remove the meat from the sauce and add the rice, let this cook for about 10 minutes over a low fire.
In a casserole dish put layers of rice and meat topping the layers with the rice, then pour the 2 cans (undiluted) of the chicken soup and sprinkle all with the Mozzarella cheese and put it in the oven for about 20 minutes at 350 degrees.
When ready to serve put your eggs sliced over all.
You can do all of this the day before and keep ready in the refrigerator and then when you want to warm it up do it in the oven in a double boiler, covering the rice with aluminum foil.
Mojito Criollo can be found in the Spanish section of most larger grocery stores.

...i'm with you....can't seem to find an "authentic" one made with simple syrup and bitters...,etc.....they all are different...& i refuse to make one with straight sugar in the glass
