The key is aging the steaks in a cooler for more than a week. They choose the whole or half carcass and butcher it themselves to get the right amount of fat and the thickness they desire. The aging process is a fine mix of temperature and moisture content in the cooler.
It's not so much any marinade as it is aging the beef and starting with the right amount of marbling in the meat and of course the right thickness. Most of the flavoring is in the sauce poured on after it is cooked and the aged beef taste. You'd be amazed that they usually just salt and pepper the steaks before broiling or grilling it.

Marinade your steaks in extra virgin olive oil, bitters, and fresh garlic, in a plastic bag for at least one hour. Cook them on a charcoal or gas grill with dried onion, bay leaf and a pinch of McCormick seasoned salt.

You can use Worchestershire sause and McCormick Steak seasonings add some garlic and maybe even some ginger but go easy on the last two ingredients they can overpower the rest.

Buy Cavanders Greek seasoning.(theres a little fat chef on the front of the shaker)
It will make your steak tasts like HEAVEN!

Take a ziplock bag and put you marinade sauce in it. Then put your meat in it. Put it in the fridge overnight then grill it tomorrow.

Yes aging is the key and a prime cut of beef as well. Aging at home can be tricky. Do your homework before you try aging meat at home.

the key is aging so they dont have to marinade it.also they get top choice meat which the public cannot buy.

try marinading with just soy sauce and cook on the grill. my secret recipe, at least i never heard of anybody doing it before.you may be amazed
