Dry Rub

2 Tablespoons paprika
2 Tablespoons light brown sugar
2 Tablespoons salt
1 Tablespoon cayenne pepper
1 teaspoon dry mustard
1 bay leaf

Place all ingredients in a food processor. Process until the bay leaf is pulverized. Store in ziploc bag up to 3 months.

I use this rub on any kind of meat. You may think I'm crazy, but try this: Rub yellow mustard (regular old hot dog mustard) on a steak. Let it sit for about an hour. Then coat with the dry rub. Grill. This will be the best steak ever! The vinegar in the mustard helps to tenderize the meat and YOU CANNOT TASTE THE MUSTARD AT ALL! Trust me!

Try this earthy spice rub the key is the coffee.

1/4 cup coarse salt (kosher or sea)
1/4 cup firmly packed light brown sugar
1/4 cup sweet paprika
2 tablespoons pure chile powder
2 tablespoons instant coffee crystals (Folgers)
2 tablespoons freshly ground black pepper
1 tablespoon onion powder
1 tablespoon garlic powder
1/2 teaspoon dried oregano

Yield: 1 cup. Mix ingredients together and store in tight fitting jar. The longer you let rub marinate in meat the better the taste.

This rub is also good with a beef brisket when you add the millionaire barbeque sauce. Hint: more coffee and dark beer.

I use a little bit of Old Bay, with some Johhny's Seasoning salt, some seasoned meat tenderizer, and just a little bit of garlic or onion powder wichever you prefer

I put this on all meat I cook.
Salt & pepper
Garlic powder
Onion powder
You'd be suprised.
