My mom made the best hot german potatoe salad. It was on of the few things that she made well, but I don't have the exact recipe!
But.... the general stuff might be enough if you are good.
potatoes
onions
pickle relish
boiled eggs
bacon fried and crumbled fat reserved
the dressing contains
reserved bacon fat, flour for thickening, 1 egg, a little sugar, and vinegar.
Afer the dressing is cooked it is poured on to the potatoe mixture and served hot.
If you are interested I may be able to get the exact ammounts from a relative, just let me know.

I make my potato salad like nobody else has ever done. I've been making it the same way for over 40 years. Everybody who eats it has said it's the best potato salad they have ever tasted. My secret? It's a secret. I don't want to put it on line, but if you will email me I will tell you what I use to make it.

Start with some red-skinned potatoes like a red rascal or desiree. These hold their shape better because they are waxier. Boil them until just tender. If you cook them too much they will fall apart, obviously. Let them cool down a bit. While they're cooling, fry up some smallish pieces of bacon till almost crispy. Drain them on paper towel. In a bowl, put a mix of half sour cream, half mayonaise with a splash of italian salad dressing (just a splash), some cold hard-boiled eggs sliced in quarters, a little grated cheese and some sliced spring onions. Add the potatoes and stir and voila!

Boil your potatoe whole with skin on first for about 20 min. Until a knife can easily go through it. Peel the skin off, it comes off easily. Cube the potatoes. Add:
mayo
sliced celery
green pepper
shredded carrotts
hard boiled eggs
s and p
onion or onion flakes
parsley or parsley flakes

This is my mom's recipe and I guarantee you'll love it. My mouth is watering right now for a bite. Its simple but so yummy. If you boil the potatoes whole first , your chunks of potatoes won't get all mashed up. Try it and enjoy. My mom's the best cook.

Naturally Miracle Whip as the dressing with about 2 1/2 pounds of potatoes, 1/2 pound of bacon( with the juice),1 medium onion ( liquidized), 1/2 pound of smoked ham(chopped fine), 1/2 a green pepper (diced in small pieces), about 15 olives with pimentos(cut in half),3 hardboiled eggs(cut in small pieces,salt and pepper to taste and a sprinkle of parsley. The amount of Miracle Whip is to taste and you should put a little mustard in too. Do not use very much mustard .less than a half teaspoon.

Skin the potatoes and boil till soft. Cut potatoes season with seasoned salt (lightly) and bake for a few min. Mix with mayo and miracle whip, mustard, boiled eggs (just a few), and a little chopped celery. Some people put too much stuff in it. And just mayo is too tart.

Make sure you add vinegar to the potatos while they are still warm... the flavor permeates them.

A little bit of ranch dip sour cream helps it.

Sweet pickles are the pants for potato salad!

Just a little bit of mustard works a treat, too.

Here's the Big Secret: don't boil your potatoes! Bake them...either in the oven or microwave. This keeps the flavor safely sealed in, and keeps the salad from being at all watery.

Keep it simple.

Yukon Gold Potatoes or Small Redskin potatoes
Hard boiled eggs
Finely diced vidalia onion
Salt and pepper
Miracle Whip

Mine is simple. I cook and slice the potatoes, then toss them in Italian salad dressing. Later after they've chilled, I stir in some mayonaise.
