Moses didn't write anything in the Bible. The stories of the bible were a sacred oral tradition until the time of King David. When the nation of Israel became a "kingdom" they had all the stories written down to keep a permanent record of it Prior to King Saul and King David's time the nation of Israel was run by the priests and prophets. Most of the old testament was compiled and transcribed originally by the scribes of King David. Very few books of the bible were written by the people who's names appear at the beginning of the book... often the book was written ABOUT the person, not BY him/her.
