The store was originally open from 7 AM to 11 PM. That was how it got it's name. It is also the store's birthday.
In 1927, convenience retailing began simply enough when an employee of Southland Ice Company in Dallas started selling milk, eggs and bread from the ice dock. Soon, the convenience store was born and became known as 7-Eleven to reflect the 7 a.m. to 11 p.m. hours of operation.
July 11 (7/11) is the official birthday of the 7-Eleven® convenience store chain.

Do you mean the convenience store name?
It might be an urban myth, but I have heard 2 explanations.
One is that the first 7-11 stores were open from 7 am to 11 pm
The other story I:ve heard is that is is somehow related to the address of the first one.

um...7-11 is the date that the first store opened. July 11. The dice game theory is probably the best supporting idea, but I'm 95% sure that it's always been a 24 hour store

Well the convienence store franchise used to mean that the stores were open 11 hours a day...seven days a week.
I craps...they are the two numbers that indicate a win on the first roll of the dice.

One definition is from the dice game called "craps". Seven and eleven win on the first roll and lose on subsequent rolls. It's known as "crapping out".
The convenience store chain of that name in the early days of its existence was open from seven a.m. to eleven p.m. I know that sounds kind of silly in this day of 24 hour food stores and wal-marts, but it was pretty unusual back then when compared to the mom-and-pop stores.
