Could be allergies. I know when my allergies get bad, my throat and voice get hoarse. Could also be excess mucous in your throat, caused by a number of things, anything from smoking, to too much alcohol, to dehydration, to sinus infection.. the list goes on and on...
If it continues, go see a doctor. Shouldn't be anything serious, but just be sure.

Sinus drainage, GERD (gastro esophageal reflux disease), smoking, allergies, polyps, alcoholic beverages, ad infinitum.
