Vets with special training can spay/neuter at 8 weeks of age. Most vets have not had the additional training and wait until 5 or 6 months.
It is better for the animal to wait in the long run. Spay/neuter cuts off all the hormones. Hormones are needed for good growth and long term developement. Since you have a boy and a girl, sooner would be better.

My vet advises between 4 and 6 months of age, although there are a few vets who do "pediatric spay/neuter". This is usually done through the SPCA or a similar organization. Not all vets are equipped to do pediatric spay/neuter. By the way, it is a fallacy that a kitten has to have a heat cycle before spay! The earliest your vet will perform the procedures, I feel, the better.

Females should wait until at least 6 months or they can get all kinds of problems with bloating, urinating, etc (my 2 girls had this problem). Males should be between 9-12 months old or you can stunt their growth development. My vet won't even perform these new procedures due to all the problems he's been made aware of. You really need to do research on the breed itself since that is a major factor.

Females should be 6+ months old, and males can be fixed as young as 4 months. Depending on growth and hormones young males can be spraying at 6 months. Mine, I have 2 males, and 2 females, were fixed with the males at 6 months and the females at 8, females did come in heat before being fixed which was a pain in the butt.

Sooner is better than later! Kittens can be safely fixed at a very young age. Ask your vet if you're uncertain.

After six months is safe. Anytime before that and they'll turn up all crazy. (I had this happen once!) Just like dogs, it's best to wait till they "grow up" or mature a little bit
