They do it simply because the opportunity presents itself and they can. Men and women don't usually cheat for the same reasons. Women cheat mostly to get what they miss at home. Men cheat for the whole no strings attached thing that they get from the girl on the side or they're bored with you, or they want out of the relationship and cheating is their way of sabatoging it, take your pick. For women cheating is about emotions. For men, just the opposite very rarely do they feel anything major for the mistress. That doesn't mean that they should be forgiven. Take back a cheater and you've just taught him that it's cool to cheat on you.

Not all men want to be tied down to one woman 24/7. And some women cheat too. Also cheating only truly applies to married couples.
