RE:
What is the best way to cook Snow Crab legs when you don't have a pot big enough to boil them?

You can put the crab legs in a pouch of foil and bake them in your oven at 350 degrees for 15 mins. The moisture from the crab is sufficient for steaming them this way.

The legs are previously cooked anyways so just crack them open and scrape the meat out into a bowl try to leave as large a chunks as possible. Make sure you go thru the the meat to pull out any shell. Dice celery stalk, 1/2 onion and 1/2 red bell pepper.
Mix together in small bowl one box of cream cheese, 1 Tbls horseradish, 2 Tbls sour cream, 2 Tbls mayonnaise, juice from one lemon, 1 tsp paprika, couple of drops of tobasco, salt and pepper to taste.

Combine the cream cheese mixture with the crab and veggies and spread on lightly toasted sour dough slices.
Place the slices on a sheet pan under the broiler and cook until slightly browned and bubbly.

The crab legs are already cooked, so you just have to thaw and heat them up. I put them in boiling water, with a some lemon juice and garlic pepper for seasoning, for about 5-7 minutes. Enjoy!

You may 'shorten them' at the joints to fit the pan, or try using your largest 'frying pan' and use low water level to 'steam them'. If 'Old Bay' Seasoning is available in your area sprinkle it heavily over the crab legs and add a lemon sliced to the water. Good luck an good eating !

This may sound stupid or wierd, but I would put them on the bbq. I would make a bag out of foil put the legs into it and put it on the bbq on low or med fire, so as not to dry them out. Put some lemon juice in the foil bag and on the legs with some butter. This too will help keep them from drying out. I like to experiment with food on my bbq and this works pretty darn good if you do it right. Just keep the foil bag closed all the way except for a tiny opening for steam to escape. Something to try.

Most grocery stores will steam them for you or take a cookie sheet with a kitchen towel on it and soak with water put snow crabs on top and cover with foil put in oven at 400 degrees and cook for 30 min or 15 if already cooked.

You can use a cleaver and chop them into smaller pieces or use a big wok to steam or stir fry them. If you like Asian flavours, here is a great recipe:

CHILLI CRAB
Serves 4

1 kg raw crabs
2 tbsp peanut oil
4 spring onions, finely sliced (to garnish - optional)

2 cloves garlic, finely chopped
2 tsp finely chopped fresh ginger
2 small red chillies, seeded and sliced

SAUCE
2 tbsp hoisin sauce
1/2 cup / 125ml tomato sauce
1/4 cup / 60ml sweet chilli sauce
1 tbsp fish sauce
1/2 tsp sesame oil

Segment crabs into 4 pieces. Crack claws open with a crab cracker to allow flavours to enter the crab meat and also to make it easier to eat the crab.

Heat a wok until very hot, add oil and swirl to coat. Add the garlic, ginger and chilli and stir-fry for 1-2 minutes.

Add the crab pieces and stir-fry for 5-7 minutes, or until the meat turns white. Stir in hoisin, tomato, sweet chilli and fish sauces, the sesame oil and 1/4 cup (60ml) of water. Bring to the boil, then reduce the heat and simmer, covered, for 6 minutes, or until the crab flesh is cooked through and flakes easily.

Arrange on a platter and garnish with spring onion. Serve with steamed rice and bowls of water with slices of lemon for rinsing messy fingers.

Enjoy!
