Go to the grocery store and buy a frozen bag of seafood medley, a 12 oz package of valencian rice, some saffron from the spice aisle, a can of peas, and and a couple of bell peppers and onions. Heat up the seafood medley in a large skillet with some oil (olive, preferably), with the onions and peppers you just chopped. Saute lightly until the onions are transparent, and set it aside. Cook the rice by bringing 3 and 1/2 cups of water and two tablespoons butter to a boil. Add the rice and saffron, and stir the mixture until it is boiling vigorously. Cook it that way for two or three minutes, then cover with a tight lid and reduce the heat to just above nothing. DO NOTOPEN THE SAUCEPAN TO PEEK!
In twenty five minutes, you will have wonderful yellow rice. Fluff the rice with a fork, and let it cool for a minute. Warm up the seafood mix until it reaches serving temperture.
Serve the rice as the bed, covered by the seafood mix, and garnish with the canned peas. This isn't exactly paella, but it is close enough to impress most anyone. If you really want to go to town with it, also add a few chopped olives with pimentos and a few capers. Que Bueno!! Muy Cubano!!

This is no-fail, and inexpensive. It can be kosher, vegan, yummy, whatever.
I'll tell you how much I make for my family (including 4 teenage boys who eat me out of house and home). Scale down as necessary.
Get a casserole dish and grease it. I use at least a 2-quart casserole. I put about 2 pounds of sliced sausage in the bottom. We're vegan, so I use tofurkey, but get polish sausage, or kielbasa, or whatever. Slice them up and put them in the bottom. Then get a large yellow onion, slice it thin, and put it on top of the sausage. Then fill whatever is left with potatoes. If they're red potatoes (they taste best), just slice them. If you have russets, that's fine, I use them a lot, just peel them first and then slice them.
That's the first part. Now the "juice".
Melt 2 tablespoons of butter (or in our case, vegan margarine) and stir in 2 tablespoons of flour. Add water, just a tiny bit at a time, and stir in. It will get thicker before it gets thinner, and that's what it's supposed to do. Add about a total of 2 cups of water. Pour it over the potatoes and sausage. Then, put in a couple of vegetable bouillon cubes (or beef cubes). They'll melt while it cooks. NO SALT, even though there are lots of potatoes.
Microwave it 10 minutes, and stir it around. Then microwave it a few more minutes and stir it again. Keep doing it until the potatoes are soft. It's done.
To make it a full meal, make a romaine salad and hand them a baguette with some olive oil to dip the bread in.
I guarantee this recipe will work, and I've never had anyone not like it. The one thing is do NOT use "low fat" sausage. The grease gives the flavor.
Good luck! And that's nice of you to want to give back.

Cook up some white rice (just follow the directions on the box). After its cooked, dump in some tomato paste (not sure if the chunky stuff will work). For a little extra zip, use flavored tomato paste (I like Huntz's oregano, basil, and garlic). Put that on a empty burner to stay warm. Next take some pre-cooked, pre-cut chicken pieces and in a fry pan add about a quarter of an inch of butter and some seasoning, either a little more garlic (I like garlic) or some seasoned pepper. Cook that until its all nice and toasty (you may have to start while the rice is still cooking).
You can either serve the chicken with the rice as a side dish or mix it all together kind of like a stew. It only takes about ten minutes tops to make and its also really cheap.

You can do any number of one-pot meals that'd go straight to a man's heart. Ya do know the way to a man's heart is through his stomach, don't ya? Yeah, there's the other thingie too, but we guys really do remember a nice full belly just as fondly.
Yeah, I know, it ain't necessarily a romantic thing you wanna. Well, how about chili? A nice mild to moderately spicy chili with cornbread muffins, iced tea, and a scoop of vanilla ice cream for dessert. Or what the hey, apple pie a la mode instead of just plain ice cream.
For the chili: this is a recipe that'll feed four people. Take and brown a pound and a half of lean ground beef in a frying pan with half a medium onion that's been diced. When the beef is browned, pour off any grease and pour in a cup of water. Add seasoning from a pre-packaged mix - Old El Paso or Ortega brand work real nicely. Stir the seasoning mix in well and bring it to a simmer. Don't let it get so thick it burns; if it needs more water, add another cupful of water hot from the tap.
While that's getting happy, as Emeril would say, mix the iced tea and get the cornbread muffins out and warm them up in t he oven. After the seasoned ground beef has simmered about 12 minutes, dump in two 14-ounce cans of chili beans with their liquid and stir that well. When this begins to simmer, taste and add cayenne and salt if needed. The amount of cayenne depends on your individual tastes. When hot, serve in ceramic bowls with warm cornbread muffins and some butter or margerine to spread on the muffins. Then everybody siddown and dig in!

Ok I just gave this recipe to someone else for another question but it is so easy and good (my mother-in-law says it is the best pork roast she has ever had!) I'm going to give it again here - hope thats not cheating!
I use the crock pot but if you don't have one and can't borrow one you could probably do it in a large pot over med heat.
ingredients:
2 lb pork tenderloin (not roast)
lipton dry onion soup
water
red wine
soy sauce
pepper
crushed garlic
for sides Lipton rice side (its by the mac and cheese), can of veggies, store bought "homemade" bread
Put 2 lbs pork TENDERLOIN in crock pot. Open package of lipton onion soup put on top of pork, flip pork. Add 1 cup water, 3/4 cup red wine (i use cooking wine), 3 tbls soy sauce. Flip again, pepper to taste. Top with crushed garlic (i buy this in the jar in the produce section). Leave garlic to cook on top. Cook low 4 hrs.
When almost ready open a package of Lipton flavored rice. Microwave as per direction. Same with green beans or corn. Open the can, simmer on stove with a little salt and pepper (i add bacon grease to beans, butter to corn). Have a loaf of that store bought "homemade" bread on hand and you have a fast, cheap, good meal!!!
If you don't have a crock pot get one! There are so many VERY easy things you can make. Put them in the pot go to work when you get home dinners ready.

I have a SUPER EASY recipe for biscuits. They are very yummy too!!!
Pre-heat oven to 350 Degrees
1 Cup self rising flour
1/2 pint Sour Cream (8oz)
2 Sticks Melted Butter
Mix together and put in muffin tins. You do not need to grease the tins due to the butter in the receipe and bake for 25-30 min. It makes about 12 muffins.
Good Luck and enjoy!

Make a nice spaghetti dinner. Fancy looking, but relatively easy. Cook a pack of spaghetti, then make homemade sauce. It is not that hard. Just take a couple of cans of plain tomato juice, on can of diced tomatoes, and sprinkle in parsley, oregano, a clove of two of garlic (or garlic powder) and to cut down on the acid from the tomatos, just maybe a tsp. and a half of white sugar. The longer you simmer it on the stove, the better it tastes. I've down it several times. Extra stuff could be a green salad or french or sourdough bread. It is a lot easier than it sounds. I know a twelve year old who can make it.

One of my favorite easy dishes...
Cook up some linguine or spaghetti
dice up fresh tomatoes, fresh basil and fresh garlic
When your almost done cooking the pasta
heat up some olive oil in a pan, saute the garlic for a couple of minutes,
toss in the tomatoes for a bit
right before you serve, toss the basil into the garlic and tomatoes and the pour over the pasta.
Servce with warm bread and wine
