It is best to bake the popcorn after adding the caramel sauce. This is my favorite recipe - it is sooo good!

Oven Caramel Corn
Just right for family video night, this crunchy-munchy snack is also a great gift idea.

12 cups popped popcorn
1 1/2 cups walnut or pecan halves or 1 1/2 cups unblanched whole almonds
1 cup packed brown sugar
1/2 cup butter or margarine
1/4 cup light corn syrup
1/2 teaspoon salt
1/2 teaspoon baking soda

1 . Heat oven to 200ºF. Divide popcorn and pecans between 2 ungreased rectangular pans, 13x9x2 inches.
2 . Heat brown sugar, butter, corn syrup and salt in 3-quart saucepan over medium heat, stirring occasionally, until bubbly around edges. Cook 5 minutes, stirring occasionally; remove from heat. Stir in baking soda.
3 . Pour mixture over popcorn and walnuts; stir until well coated. Bake 1 hour, stirring every 15 minutes.

Enjoy!

Baking soda and baking helps make popcorn crispy. Here's a recipe for crunchy caramel corn that is done in the microwave. It's sensational!

Killer Caramel Corn

2 bags popped microwaveable popcorn
1 cube butter or margerine
1 cup brown sugar
1/3 cup corn syrup
1 tsp vanilla
1 tsp baking soda

place popped popcorn in a big paper grocery sack. set aside.

in a microwaveable bowl, add sugar, corn syrup, and butter. Melt on high. Stir, then place back in micro until boiling. Stir in vanilla and baking soda, stirring until foamy. Pour over popcorn in bag. Shake to coat.

Place bag in micro for 60 seconds. Take out and shake. 30 seconds more, then shake. 30 seconds more, then shake again. Pour popcorn into a big bowl. As it cools it will harden. Break up pieces with spoon.

This is seriously tasty popcorn.
