Drink O'Douls or some other non alcoholic beverage. If your employers require you to drink to keep your job they are not only a bunch of wankers, but they are also violating the law.

I believe that you are who you are..if you are expected to consume alcohol to be social then find another job..you can drink a beer or a mixed drink then switch to coke or what ever..you know I would respect you far more if you didn't drink in excess that you can't have a conversation thus not being sharp and alert..character is what employers see..stand for your beliefs and they will not being talking about you after the party is over..it will be the fellow that had that one too many drinks...get my drift..

Though all suggestions would help, here is mine. Eat first. Drink water second. And third I found a pill unbelievable supposedly used by the KGB that helps minimize the alcohol effect and hangover. It works for me and don't care about the none believers. Either before drinking to stop effects or after drinking for the morning time it cannot be beat. Drink something nonalcoholic that looks like an alcoholic drink. For example, ask for a Coke with a wedge of lime on the rim of the glass. Or drink club soda, also with a garnish, "pretending" that it's, like, vodka and tonic. You don't have to drink because of peer pressure, no matter what your age. If you feel you absolutely must drink in order to conform, just order two drinks: one with alcohol, and the other without. Sip the alcoholic beverage very slowly to make it last for over an hour, while drinking your other, nonalcoholic drink regularly, thereby making it appear as if you're joining in with the boozers.

Now if you did a line of coke with the booze that would keep you alert. lol
Seriously, drink something like pina coladas or mudslides which basically don't have a lot of alcohol and you can sip on for a long time. or get your own drinks, get seltzer or sprite with a slice of lime -- it will look like gin & tonic.
There are excuses but they can't be repeated too often, ex. you are taking antibiotics and your MD advised you that drinking alcohol would reduce the affectiveness of your medication.

You do NOT have to drink at work related social functions. I have spent many hours at these kinds of events. I participate in every way except I don't drink alcohol. I talk, I laugh, I listen, I mingle, I get in the middle of it. If you think that is too hard to swing, then hold one drink, glass half full, all night long.
I assume you are not a teenager or a frat-boy. You don't need to act like one.

Ask for gin & Tonic without the Gin, just a lime. Important: Ask for a stirrer instead of a straw with indicates to others that you are imbibing an adult beverage. You'll be as alert as you desire but probably bored. Nothing worse than being sober around drunks. The only reward is being able to recall to others what fools they made of themselves. Downside: Having to drive people home.

Sip on drinks for a very long time like I do. And remember to drink a glass of water between each drink. Also an energy drink might work as well.

My dad had these tips. Activated charcoal tablets (health food store). Take a bunch before you drink. It soaks up the alcohol so it slowly gets into the bloodstream.
Eat protein and good fat, but no carbs, if you can eat before drinking. Protein and good fat (almonds - olive oil) slow down the processing of the carbs (the alcohol) kinda like the activated charcoal, but maybe not as effective.

It's perfectly reasonable to order club soda or a non alcoholic beer from the bar.
If you'd rather that your coworkers don't know what you're ordering, feel free to pull the bartender or waitress aside and explain that you want to be sharp and sober. Then, in front of everyone, you can just order, "My usual." (Remember to tip the barkeep or waitress.)
