Put it on raw... cus the bacon will give off a great favor in the beans also chop up some sausage cook First then drop them n also....enjoy........PeAcE

I have done it a bit differently, and have used specially-sliced bacon - each slice is about 1/4 inch thick. I fry this up in the bottom of the pan, along with onions. After my beans have soaked and cooked and are ready to go in the oven, I mix the fried bacon, onions, and drippings into the beans, along with any seasonings I want, and bake it all together. It distributes the bacon/onion flavour through the beans while they are slow cooking.
If I am serving the beans in a large glass serving dish at the table, I will partially cook additional supermarket bacon, place the strips across the top in a lattice pattern (much like a pie) and stick it under the broiler until the bacon has crisped - the best of both worlds! Crispy bacon on top and true bacon flavour in the middle! It ain't low cal, but it sho' is sweet!!

usually put the bacon in raw if you want the bacon flavor in the beans if not and you want it more like part of the dish you can cook it first

you can do it both ways but you will find that putting the bacon raw will drastically improve the taste of the beans.

I have always found that to nuke the bacon slighty under-cooked then rough-chop then scatter it just so. Then you don't end up with one side real crispy and the other a soft gooey white leather shoe. dig?
