In Spain there is (was?) a phrase "Lo que hace el rey ..," which litrerlly means " what the king does ..." and implies a blind tendency to imitate.
There is also an Argentinian phrase which has the female monkey doing whatever the male does. "Lo que hace el mono, hace la mona." "What the (male) monkey does, the (female) monkey does."
The other phrases that translated "monkey see, monkey do" literally are not used in Spanish.

The idea of that phares is that whatever the monkey sees, the monkey will do, isn't it? If so, some translations might be:
"Lo que el mono ve, el mono lo hace"
"Lo que el mono vea, el mono lo hará"
"El mono ve, el mono hace"
"mono ve, mono hace"
can change "mono" for "chango"
