Grill to your liking, then serve with this

Chipotle Chile Butter

Prep: 5 minutes
Servings: Makes about 1/2 cup
1/4 cup (1/2 stick) salted butter, very soft
2 Tbsp. minced shallots
1 Tbsp. minced fresh cilantro
1 Tbsp. minced chipotle peppers in adobo sauce
1 tsp. fresh lime juice

Combine all ingredients in small bowl. Stir with fork until uniformly blended.

Soak it overnight in a solution of 1 gallon water, 1 cup sugar and 1 cup salt. Use a covered container in the fridge, of course. Make sure the steak is fresh. Frozen meat isn't very good.

If you want a more tender steak, take the meat and pound it good with a meat tenderizer before soaking it.

Then, put it on the barbecue. You can use a steak rub or baste it with barbecue sauce or just eat it plain. They are all good.

Season with Montreal Steak seasoning. Put on a hot grill 4 minutes per side. Cut and enjoy.
