POTATO FILLING
1/3 c. butter
1/4 c. onion, chopped
3/4 c. celery, chopped
1 1/2 tsp. dry parsley flakes
1/2 tsp. salt
1/8 tsp. poultry seasoning
5 c. day old soft bread cubes
1/8 tsp. pepper
Saute onion and celery in butter. Stir in the remaining above ingredients. Cook 1 large potatoes. Mash and add 1 teaspoon salt and 1 cup milk. Beat in above filling mixture. Turn into a greased 1 1/2 quart casserole. Bake uncovered in a 350 degree oven for 30 to 35 minutes or until lightly browne

Have Green Pesto sauce in your jacket potato and have it with mixed salad leaves and chopped tomato, cucumber and coleslaw along with some over grilled bacon and some melted chesse on the bacon....HHmm

Put plenty of butter in your potato, then put plenty of beans, and melted cheese, it tastes really great, and it is a really popular topping for any jaket potato!

cremé fresh, ham, lettus, pineapple, croutons but I prefere it all on a jacket sweet potatoe, but dont cook it as long as a normal jacket potatoe
