Try stir-frying some vegetables. Use only a little olive oil. You'll have to cut them up first, of course. We're talking things like bell peppers, celery, carrots, maybe some cabbage or baby corn...stuff you can easily pick up (I think supermarkets even have it pre-bagged). Just keep stirring - you want to cook them, not burn them!
Cool fruit juice, maybe some chunks of cheese and maybe a piece of whole-wheat pita bread.

Vegetable soup , you can put what you want in it as far as veggies are concerned . Just keep tasting as you add ingredients . Corn bread - 2 cups of corn meal , 2 tablespoons of oil , 1 egg , add buttermilk or sweet milk till it is sort of like lava . Pour into a nonstick baking pan , preferably a cast iron skillet , bake at 450 degrees for 45 minutes or until golden brown .
It really is easy to make , you could bake it in a toaster oven if the pan will fit .

Simple, fairly quick, and tastes great.
EGG & CHILI CASSEROLE
10 eggs
1/2 C butter
1/2 cup flour
2 four oz. cans chopped, mild green chilis (Ortegas)
1 tsp salt
1 pint cottage cheese (small or large curd)
1 1/2 lb mont. jack cheese (shredded)
Grease 9x13 pan lightly.
Whip eggs until blended.
Add remaining ingredients.
Stir together.
Pour into pan.
Bake at 350 until set. (30-45 min.)

Fresh, vine ripe tomatoes stuffed with tuna salad or chicken salad. Avacado halves stuffed with shrimp salad.
OR
Screw the diet and make yourself a sandwich with Monterey jack cheese, red onion, avacado, and alfalfa sprouts -- and serve it up with some potato chips! That oughta blow your carb count for the next 2 weeks!!
