The adult eye will not grow in size. There are some conditions that can make the eyes bulge forward making it look like the eye is growing but the eye stops growing at an early age.

could be a brain tumor that is growing and pushing the eyeball out and it looks like it is changing size.

Since your eyeballs are mostly water, freezing should cause them to expand a bit. Only try this when you're sure you won't need them again though.
