Tasmania is a beautiful and very picturesque place. Launceston is an easy town to walk around, with some interesting old buildings and a couple of nice large parks. Cataract Gorge is a must see and a great place to visit.
Cradle Mountain is stunning. There is a 5km walk right around Dove lake, with the mountain as a backdrop. You will love that walk! There are also various other walks in the region, and nice luxury self-contained accommodation nearby is available.
Hobart is nice with some interesting old buildings. The Salamanca Markets are a well known attraction as well as the waterfront restaurants and wharf.
The Royal Tasmanian Botanical Gardens in Hobart are lovely too.
Richmond is a nice little historical town not far from Hobart...and if you have the time, go and visit Port Arthur.
Tasmania has a lovely spectacular coastline in various places...and if you love nature then you will love the various rainforest walks and beautiful waterfalls!
I would recommend the "Lonely Planet book of Tasmania" Have fun!
P.S. The link I have provided will give you great information on what to see and do and where to stay.

We were in Tasmania in March and are keen to go back and spend more time. It's like a whole country in one small island. I endorse everything that Petra recommended: Salamanca Markets, Constitution Docks, Battery Point in Hobart and Mt Wellington (Hobart); the Dove Lake walk at Cradle Mtn. Freycinet National Pk is supposed to be fabulous, too. The Cadbury Factory tour (outside of Hobart) is very popular and apparently very good, but book ahead. Also, we loved the Tahune Airwalk (south of Hobart) - beautiful drive, and a great experience walking among the treetops. Tourist Info office in central Hobart tends to be very crowded, so beware. Tas tourist info websites are excellent.

You should rent a car and drive around the coast. Tasmania has some of the best scenary in the world. Go to Wineglass bay. Port Arthur is also interesting - the old convict prison is interesting.

We had the most marvelous lobster (buy it already cooked down by the harbor) in Hobart.
As you drive around, keep an eye out for the wildlife. We saw a young Tasmanian devil along the roadside. One wildlife part would let you hold a wombat.
Have a wonderful trip!
