I think one of the best recipes for Ceasar Salad Dressing (cream base) was at Outback Steakhouse. It is not a 'true Ceasar' which only uses Olive Oil and not mayonnaise or other 'cream base' but it is a good one. I think I found it on a website, which I cannot remember the name of, but it is a website that is full of 'knockoff' recipes from Popular Restaurants. Try a www.google.com search for Outback Ceasar Dressing, or simply Outback recipes. Good Luck !! Caesar salad is my very favorite type of salad.

CAESAR SALAD
1 large head romaine lettuce
1 cup olive oil
3 cups French or Italian bread
2 large cloves garlic
8 anchovy filets
1 teaspoon Worcestershire sauce
1 teaspoon dry mustard
2 tablespoon lemon juice (fresh is best)
1 teaspoon fresh ground black pepper
1 teaspoon coarse ground salt
2 egg yolks for large eggs, at room temperature*
1/2 cup grated Parmesan cheese
1/4 cup Parmesan cheese, shredded or shaved
Trim the romaine lettuce of bruised or browned leaves, then cut into 1 1/2 inch pieces. Wash and drain the lettuce, pat it dry and refrigerate for 30 minutes to crisp the leaves.
To make the croutons, cut the bread into cubes, heat the 1/2 cup olive oil in a sauté pan over medium-high heat. Fry the bread cubes in the oil, tossing frequently, until they're crisp and golden. Drain the croutons on a paper towel until ready to use.
Peel the garlic cloves then put in a large wooden salad bowl. Mash the cloves against the sides of the bowl with the back of a wooden spoon. Rub the pieces against the bowl until they begin to disintegrate. Remove most of the mashed garlic from the bowl and discard (oil from the garlic will remain in the bowl and flavor the salad).
Add the anchovies and repeat the procedure you used with the garlic, but leave the anchovy pieces in the bowl. Now add the dry mustard, Worcestershire sauce, lemon juice, black pepper, and egg yolks and blend well. Slowly drizzle in the remaining olive oil mixing with a wire whisk until a creamy mayonnaise type dressing forms.
Add the lettuce, croutons, Parmesan cheese and salt. Toss everything together and serve directly from the salad bowl!
*Note: The original recipe may have called for coddled whole eggs (warmed to 120F degrees, to coddle simmer in water 1 minute and cool in cold water) so they are soft and runny. Some chefs who make this salad today use the whole egg at room temperature.

Ceasar salad uses romaine lettuce, ceasar dressing, bacon bits, croutons and that's pretty much everything you need!
Wash and tear the lettuce ( some people like to cut it) into bite size portions.
Add your bacon bits and croutons and toss the salad ( mix it ).
Add your dressing right before you're ready to serve the salad so the lettuce doesn't get to soggy and you've got a ceasar salad.

** Anthony's Caesar Salad **
(Anthony's is located in Houston, Texas.)
1½ heads Romaine Lettuce, cleaned, rinsed and torn in pieces; remove large ribs
3 Garlic Cloves
½ Tbsp. Dry Mustard
1½ tsp. Worcestershire Sauce
juice of 1/2 Lemon
4 Anchovies
2½ Tbsp. Red - Wine Vinegar
1 C. Extra Virgin Olive Oil
2/3 C. grated Romano cheese
1 C. Homemade Croutons
Freshly ground White Pepper to taste.
Dry and chill letter in refrigerator. In large wooden bowl, mash garlic with mustard, Worcestershire, lemon juice, anchovies, and vinegar until smooth. Pour in oil while whisking and mix until smooth. Mix in cheese. Add lettuce croutons. Toss well and serve on chilled salad plates. Offer freshly ground white pepper on top.

1 egg, coddled
12 ounces caesar-flavor croutons
1/2 cup romano cheese or parmesan cheese
Wash lettuce and tear into bit size pieces.
whisk together next 7 ingredients.
Let dressing sit for at least 1 hour, not refrigerated.
Toss lettuce with cheese and croutons.
Toss well with dressing.

Use fresh romaine lettuce and ceaser dressing (I like Emeril's) toss to cover all the lettuce and top with some fresh grated parmesean cheese and some fresh pan fried Pancetta (so much better than bacon and truly Itallian) then some homemade croutons and fresh cracked pepper and you have it unless you like grilled chicken or shrimp which is a nice way to make it a meal.Enjoy!!!
