Both are grammatically correct alone. But the second sentence, “I am Sagittarian.” Is a better statment of the two choices. I am a Sagittarian. Is a statement the most likely wouldn’t make sense when put together with other sentences in a paragraph. I would go with the second choice, “I am Sagittarian.” If I had to choose one of them.

Two. Sagittarian is an adjective. (I am good)

It can be an adjective, but in this context it is a noun, so it needs a definite or indefinite article. For example:

"I am a person who believes in nonsense like astrology."
