Dead: Ginette Neveu. Purchase the Sibelius Violin Concerto, with Walter Susskind at the baton and the Philharmonia Orchestra on the EMI label. Simply put, in my dubious opinion, this is the greatest single recording of any violin concerto ever. Nothing comes close. Read the liner notes and be sorry she's been dead a long time.
Living:
Kyung Wha Chung. She's still great today, yet magical in just about any performance. My favorites are the Tchaikovsky and Mendelssohn concertos with Charles Dutiot Conducting the Montreal Philharmonic. There is also a timeless and famous recording of of her with Charles Dutiot conducting 4 pieces (Havanaise, Tzigane, Rondo Cappricioso and Poeme) on the London Label.
Anne Sophie Mutter: Any recording before she married Andre Previn and thought she could conduct. Her Beethoven concerto with Von Karajan and Berlin is magical, as is her original performance of Mozart's 3rd and 5th violin concertos with the same team.
Perlman is really good too, and the Beethoven Concerto with Carlo Maria Guilini conducting the Philharmonia is a great performance. Yet it is the 24 Caprices of Paganini by Perlman on EMI that truly made him as famous as he is today.
