well, it depends on how you cook that chicken... if, roasted, you could pair it with veggies for a crunch and for nutritious purposes, a fresh salad (mixture of lettuce, carrots, red cabbage, cheese, onions, tomatoes) would do .. if fried, here in the Philippines, we do it with spaghetti (weird, I know, but it kinda works, you know), if steamed, you could saute broccoli using this recipe:
combine 1/4 cup soy sauce, 1/4 cup lemon juice, 2 tbsps rice vinegar, 2 1/2 tbsps rice wine, 2 tbsps water, 1 tbsp sugar, 2 tsps sesame oil, 1 slice garlic clove in a small saucepan over medium heat. Stir until sugar dissolves. Bring to a simmer and cook for 3 - 5 mins. Serve over steamed brocolli.

I'll Roast the chicken, and stuff the chicken with tomatoes... 10 mins before the chicken is done, I'll add streaky bacon on top of the chicken so that the chicken breast will not be too dry...
I'll also make some soup and potato salad, with some drinks.

Honey Chicken. It is very simple to be cooked. Just roast the chicken in the oven. Than after it is cooked, just pour some honey on it. You should keep ot till cool for 15 minutes. Than it is ready to be eat.

MAGDALINAS VALENTINE CHICKEN
4 boneless skinless chicken breast
2 cans Campbell's condensed golden cream of mushroom soup
1/4 chopped yellow onion
milk (1) one soup can's amount
flour seasoned with garlic powder, season salt, pepper, and (dill weed) optional.
Season and flour 4 chicken breasts and fry in skillet with vegetable oil till done.
Drain and remove excess grease from skillet.
Combine chopped onion, milk, Campbell's condensed golden cream of mushroom soup, 2 tbsp of seasoned flour in skillet with cooked chicken breasts.
Simmer on medium heat till onions are soft.

boil your chicken and debone it
boil 1 pkg rotinni noodles, drain
1 can cream of mushroom soup
1 can cream of chicken soup
1 can rotell tomatoes
1 pkg velvetta cheese
heat over low with 1 cup milk till smooth
add deboned chicken and noodles
serve with crusty french bread and a salad

CHICKEN TETRAZZINI
2 tablespoons onion
1 tablespoon butter
10 3/4 ounces cream of mushroom soup
1/2 cup water
1/2 cup shredded cheddar cheese
1 cooked chicken, deboned & chopped
3 cups cooked spaghetti
2 tablespoons parsley
2 ounces pimiento
4 ounces mushrooms, canned
Cook onion in butter until tender. Add soup, water, and cheese; heat until cheese melts. In buttered casserole dish, combine chicken, spaghetti, parsley, pimiento, and mushrooms. Add soup mixture. Top with extra shredded cheese. Bake at 350 F. for 20 minutes or until bubbly.
If mixture seems too dry, add a little milk.
Serving Size: 8
CHICKEN ENCHILADAS
1/3 cup peanut oil
1/2 cup onion, finely chopped
2 cloves garlic, crushed
1/2 cup flour
13 1/4 ounces chicken broth
1 2/3 cups water
1/2 cup enchilada sauce
1 tablespoon chili powder
1/2 teaspoon salt
5 ounces shredded cheddar cheese
1 1/2 cups cooked chicken, diced
1/4 cup black olives, pitted & sliced
8 7 inch corn tortillas
Heat oil in a saucepan over medium heat; add onion and garlic and cook until tender. Stir in flour, mixing until smooth.
Gradually add chicken broth, water and enchilada sauce, mixing until smooth. Stir in chili powder and salt. Cook over medium heat, stirring constantly, until thick. Reserving 1/2 cup cheese, mix remaining cheese with chicken and olives.
Dip corn tortillas in prepared sauce for about 5 seconds. Spoon 3 tablespoons chicken filling across center of each; roll up and place seam side down, in a shallow 2 1/2-quart baking dish.
Pour remaining sauce over tortillas. Bake at 350 F. for 15 minutes. Sprinkle with reserved cheese and continue baking 10 minutes. Garnish with sliced ripe olives if desired and serve immediately. Makes 4 servings.
